Steps:

  • 1. . Cut meat intro strips. 2.Mix ingredients. 3.Marinade meat, covered, in fridge over night. 4.Place on foil in 200 degree oven with the door propped open until pliable. Enjoy!

2 pounds of venison (or any meat type)
2 tablespoons of worcestershire sauce
2 tablespoons of vinegar
1 tablespoon of salt
1 teaspoon of red pepper
2 sliced cloves of garlic
2 teaspoons of cayenne pepper
1 cup of water

Jerky Lover's Jerky - Sweet, Hot and Spicy! image

Steps:

  • In a small bowl or cup, mix together the onion powder, garlic powder, and some cracked black pepper. Season the meat lightly, using only part of the mixture. Reserve the remaining spices. Place into an airtight plastic container or bowl, and refrigerate.
  • In a saucepan over medium heat, mix together the brown sugar, soy sauce, teriyaki sauce, Worcestershire sauce, balsamic vinegar, liquid smoke flavoring and pineapple juice. Heat until the brown sugar has completely dissolved. Refrigerate marinade until cool.
  • Pour cooled marinade over the seasoned meat, and mix by hand to coat. Seal the bowl, and refrigerate for at least 3 hours.
  • Arrange the beef strips on the rack of a dehydrator, and sprinkle with a little bit more of the spice mixture and red pepper flakes if using. Dry for 5 hours, or to your desired dryness.

DEER JERKY

A zesty venison jerky that you can make at home in your oven. If you have a food dehydrator, you can dry the jerky in it by following the manufacturer's instructions. You can also reuse the marinade for additional batches.

Steps:

  • Slice meat into long strips, 1 inch wide and 1/8 inch thick. In a large releasable plastic bag, combine soy sauce, Worcestershire sauce, liquid smoke, ketchup, pepper, garlic powder, onion salt and salt. Place meat in, and close bag. Refrigerate overnight. Knead occasionally, to evenly distribute marinade.
  • Preheat oven to 160 degrees F (70 degrees C). Place a pan on the bottom of oven to catch drips, or line with aluminum foil.
  • Place meat strips on a rack so that they do not touch each other, and dehydrate for 6 to 8 hours in the oven, or until desired consistency is achieved.

Mondo's Hot & Spicy Venison Jerky (Can Substitute Beef) image

Steps:

  • Cut meat into strips and remove all fat.
  • Add all ingredients into ziplock bag and shake well.
  • Marinade for 8-24 hours.
  • Place on dehydrator.
  • Remove after fully dried and place into a clean ziplock.
  • For the first 1/2 day keep bag slightly opened so any remaining moisture will evaporate.

SPICY DEER JERKY

I don't have any hunters in my family, but my "deer" friend, John, always brings me one every year. I'm unsure of yields. This is our favorite jerky. It's awesome. Unfortunately, it doesn't hang around long. I use to have to get the Sambal Oelek at an oriental market, but I now see it in the Asian section of my local supermarket. I actually use 2 heaping tablespoons. You do it to your taste.

Steps:

  • Lay your meat out on aluminum foil and sprinkle it with salt.
  • Take a tenderizer and beat the salt into the meat, or just take your fingers and massage the salt in.
  • Doing this will make the finished product more tender.
  • Next mix all of your ingredients in a bowl.
  • Take your meat and let it marinade for a least 4 hours (works better if done overnight).
  • Cover the bowl with an air tight lid and put in the refrigerator.
  • Put in the dehydrator for 8 hours.

  • Put the soy, sugar, onion, garlic, chipotles and the adobo sauce, lime juice, curing salt and enough water to fill the can of chipotles into the blender and blend until smooth. Taste it (it will be a bit zippy), and add salt if you need it -- the marinade should taste pretty salty.
  • Mix the marinade into the meat really well. The slices are going to want to stick to each other, so you need to use your hands (wear gloves if you are very sensitive to chiles) to make sure each side of every slice gets well coated with this marinade. It's enough for a full 7 pounds of meat. Pack the mixture into a non-reactive (plastic, ceramic, stainless steel) container, cover and refrigerate for at least 24 hours, and up to 48 hours. How long you take it depends on your personal salt tolerance and on whether you plan on storing the finished jerky for months or not. If not, go less salty.
  • When you are ready, lay the meat on dehydrator trays in one layer. Don't let the slices of meat touch. Set the dehydrator to 160°F for 2 hours, then drop the temperature down to 145°F until the jerky is ready. You know this because the jerky is still sorta pliable, but when you bend it, the meat starts to fracture and crack a little -- this is how I like my jerky. All told, the jerky should be ready in about 6 hours. You can, if you are planning to store this at room temperature for a long time, dry it until the meat is brittle.

  • With a sharp knife, slice the venison into 1/4-inch-thick slices. Trim any fat or connective tissue. Ingredients. 2 Pound venison, trimmed.
  • In a large bowl, whisk together the apple cider vinegar, onion powder, garlic powder, salt, soy sauce, Worcestershire sauce, brown sugar, black pepper, paprika, cayenne, red pepper flakes, and habanero peppers.
  • Transfer the venison and its marinade to a large resealable bag and seal, removing as much air as possible. Marinate in the refrigerator overnight.
