SPICY PORK TOSTADAS
I serve these flavorful tostadas as a casual meal for family or friends. My husband and I love the salsa topping so much that I often double that part of the recipe so we have some left over to serve with chicken, on burgers or as a dip. -Kathy Smith, Pittsburgh, Pennsylvania

Steps:
- Preheat oven to 170ºF/75ºC.
- Brush on some vegetable oil on one side of each tortilla; set aside.
- Warm up a panini press on medium-high heat.
- When hot, working with one at a time, place a tortilla, oiled side down, and brush the top with oil. Place the press on top and cook for between 40 to 60 seconds or until golden brown. Flip it and cook the other side.
- Transfer the cooked tortillas in a single layer on a baking sheet lined with a wire rack and transfer them to the preheated oven to keep them warm while looking after the toppings.
- In a bowl, add refried beans with Old El Paso Taco Seasoning. Combine the ingredients until well blended.
- In a medium skillet over medium-low heat, add the refried bean mixture and warm it up, stirring often. When the refried bean mixture is warmed, turn the heat to the lowest setting until ready to serve.
- In another medium skillet over medium heat, add ground beef and, breaking the meat into small pieces, cook it halfway.
- Season the meat with ground cumin, oregano leaves, chipotle powder, ground sea salt and freshly ground black pepper. Stir well until nicely mixed and continue cooking until the meat is no longer pink.
- Add pressed garlic and sauté for only 1 minute.
- Using a slotted spoon, scoop the meat into a bowl, leaving the fat behind.
- To assemble, spread some refried bean mixture onto a grilled tortilla, about 2 tablespoons.
- Scoop some ground beef mixture on top then some chopped iceberg lettuce, diced Roma tomatoes, Pico de Gallo or Fire Roasted Salsa, avocados, pickled red onions, and cheese.
- Drizzle on crema and sprinkle on chopped cilantro. Serve them with a couple of lime wedges.

- For the chicken: Place the chicken, peppercorns, salt, garlic, bay leaf and onion in a large heavy saucepan with 6 cups of water. Bring to a boil over high heat, and then reduce to a simmer over medium-low heat for 20 minutes. Turn the heat off and remove the chicken from the liquid. Reserve the broth for later use. Using 2 forks or clean hands, shred the chicken into a bowl and set aside.

Add the garlic and saute for 1 minute. Add the tomatoes and cook for 1 minute. Add the tomatillos and cook for 1 minute. Add the chipotle, salt, pepper, Mexican oregano and the sprigs of marjoram and thyme. Add the shredded chicken. Continue cooking for another 3 minutes. Saw them make this on ATK and had to copy down the recipe to make in the future. It looked scrumptious! For garnish it lists Queso Fresco, fresh cilantro, sour cream, diced avocado and lime wedges.

Steps:
- Bring pork, quartered onion, smashed garlic, thyme, 1 tsp salt and 6 cups water to simmer in large saucepan over medium-high heat, skimming off any foam that rises to the surface. Reduce heat to medium-low, partially cover and cook until pork is tender, 75-90 minutes. Drain pork, reserving 1 cup cooking liquid. Discard onion, garlic and thyme. Return pork to saucepan and using potato masher, mash until shredded into rough 1/2" pieces. Set aside.
- Heat olive oil in 12" nonstick skillet over medium-high heat until shimmering. Add shredded pork, chopped onion and oregano; cook, stirring often until pork is well browned and crisp, 7-10 minutes. Add minced garlic and cook until fragrant, about 30 seconds.
- Stir in tomato sauce, chipotle powder, reserved pork cooking liquid and bay leaves; simmer until almost all liquid has evaporated, 5-7 minutes. Remove and discard bay leaves and season to taste with salt.
- To fry tostadas, heat vegetable oil in 8" heavy bottomed skillet over medium heat to 350 degrees. Using fork, poke center of each tortilla 3-4 times (to prevent puffing and allow for even cooking). Fry 1 at a time, holding tortilla down to keep it submerged. Drain on paper towel lined plate and season with salt to taste.
- Spoon small amount of shredded pork onto center of each tostada and serve with garnishes.

- Start by peeling the garlic clove and roughly chopping 1/2 onion. Cook the onion and garlic in a glug of oil over medium heat (you can leave the garlic clove whole).
- Once the onion is starting to brown, approximately 5-8 minutes, add 1 can chickpeas (drained and rinsed), 2 chipotles in adobo, 1/4 teaspoon cumin, 1/4 teaspoon salt, freshly cracked black pepper, and 1/2 cup stock (or water). Let simmer for a few minutes until heated through and then add everything to a blender, combining well.
- Take a taste for seasoning and heat. I added another generous pinch of salt and cumin to this batch, but I was happy with the heat level.
- For the tostadas you can warm up store-bought tostada shells or bake your own. Then simply add a layer of the chickpea puree, diced avocado, pickled jalapenos, Queso Fresco, and some freshly chopped cilantro. Serve immediately. Keep in mind that you can customize the tostadas to your palate (and based on what's in the kitchen!).

- Easy Mexican Tostada. Let’s begin with a standard tostada recipe. It’s a simple, layered dish that starts with a crunchy tortilla. To that, you add refried beans, well-seasoned ground beef, lettuce, and cheese.
- Chicken Tostadas. These tostadas substitute cooked chicken for ground beef. They also swap out black beans for refried. Otherwise, they’re pretty similar to the ones above.
- Roasted Chipotle Butternut Squash Tostadas. Here’s a “fancier” recipe if you’re looking to up the ante on your tostadas. Set these beside the easy Mexican tostadas from number one.
- Easy Beef Tostadas. These six-ingredient tostadas are beefy, cheesy, and delicious. If you’re looking for a more Americanized tostada recipe, this one is perfect.
- Egg and Smashed Avocado Tostadas. Who said tostadas were for lunch and dinner only? This protein-packed tostada makes a wonderfully nutritious breakfast.
- Pita Tostadas with Butternut Squash, Black Beans, & Avocado. Use toasted pita bread if you want a thicker, heartier tostada base. These elaborate tostadas aren’t low-carb friendly, but they’re phenomenal.
- Fish Tostadas (Baja-Style) Kick plain old fish tacos to the curb! These fish tostadas are the new stars of the show. They’re sweet, savory, and just a little bit spicy.
- 10-Minute Oven Baked Tostadas. These tostada shells prove that tortillas don’t have to be deep-fried to be delicious. You need just three ingredients to make them: tortillas, salt, and oil.
- Bean Tostadas. You don’t need meat to make them exceptional, either. Instead, pile them high with beans, salsa, and your favorite veggies and toppings.
- Turkey-Lime Jicama Tostadas. These tostadas are a little different from others on the list. Instead of tortillas, you’ll use thin slices of jicama. They’re lighter and less carb-heavy than other tostada options.
