- In a large skillet, cook beef and garlic over medium heat until meat is no longer pink; drain. Stir in tomatoes and spaghetti sauce; heat through. Transfer to a large bowl., In a small bowl, combine the soup, eggs, cottage cheese and Italian seasoning., Return 1 cup meat sauce to the skillet; spread evenly. Layer with 1 cup cottage cheese mixture, 1-1/2 cups meat sauce and half the noodles, breaking to fit. Repeat layers of cottage cheese mixture, meat sauce and noodles. Top with remaining meat sauce. Bring to a boil. Reduce heat; cover and simmer for 15-17 minutes or until noodles are tender., Remove from the heat. Sprinkle with shredded cheeses; cover and let stand for 2 minutes or until melted.

SPICY SKILLET LASAGNA
The wonderful taste of lasagna in less than half the time and in a single dish! Can you get any better than that? It works well with either no boil noodles or cooked noodles, and I usually use white shredded cheeses (mozzarella and 6-cheese italian mixes) instead of ricotta.

Steps:
- Cook ground beef in large skillet over medium-high heat, stirring frequently until brown and crumbly (~5 minutes).
- Add half the spaghetti sauce and stir well.
- Pour diced tomatoes evenly over ground beef.
- Combine ricotta and egg in a bowl and spread evenly over tomatoes.
- Top with a layer of lasagna noodles.
- Layer with the remaining sauce, then more noodles.
- Bring to a boil and reduce heat to medium low.
- Cook, covered about 10 minutes until noodles are tender.
- Top with mozzarella and cook, covered, for 2-5 more minutes.

- Fill a large saucepan three-fourths full with water; bring to a boil. Add pasta from lasagna dinner; cook, uncovered, 10-12 minutes or until tender., Meanwhile, in a large skillet, cook beef, onion, green pepper and garlic over medium heat 6-8 minutes or until beef is no longer pink and vegetables are tender, breaking up beef into crumbles; drain., Stir in spaghetti sauce, salsa, seasonings, and contents of seasoning packet from lasagna dinner. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Remove from heat. , Drain pasta. Add to tomato mixture; toss to coat. Sprinkle with cheese; let stand, covered, until cheese is melted. Freeze option: Freeze cooled pasta mixture and cheese in separate freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a skillet, stirring occasionally and adding a little water if necessary. Remove from heat. Sprinkle with cheese; let stand, covered, until cheese is melted.

- 1. Preheat oven to 375 degrees. In a 12-inch, high-sided skillet, heat oil olive over medium heat. Add the sausage and cook for about 7 minutes, breaking it apart into bite sized pieces with a wooden spoon, until cooked through and brown.
- 2. Add the shallots and garlic and cook for 3 minutes, or until translucent and slightly fragrant. Add lemon zest and red pepper flakes and cook for an additional 2 minutes to toast. Stir in broccoli rabe and season with salt. Cook for 2 minutes or until rabe is wilted. Remove the meat mixture a medium bowl and return the pan to low heat.
- 3. Spoon a small amount of the marinara sauce on the bottom of the skillet. Mix the remaining marinara with the sausage mixture in the bowl.
- 4. Layer half the lasagna noodles on top of the marinara breaking them up as needed to fit the pan. Cover with half of the meat mixture. Add 3/4 cup Parmesan cheese and half the mozzarella. Layer the remaining noodles. Cover again with remaining sauce and top with the remaining Parmesan, mozzarella and Gruyere.
