SPICY POTATOES
Serve these potatoes as part of an Indian buffet, or as a side dish for grilled meat

Steps:
- Cover the potatoes in cold salted water, then bring to the boil. Simmer for 5 mins, until just tender. Drain and allow to steam dry for a few mins. Heat the oil in a frying pan and fry the spices for 1 min until fragrant. Tip in the potatoes and toss well so they are coated in the spices. Gently fry for 5-10 mins until slightly golden, then add peas, mix well and cook for 3-4 mins more. Season well before serving.

ULTIMATE SPICY SPUD SOUP
My hubby's uncle created this wonderful soup...everyone slurps it up. It is excellent served with a crunchy French bread! Word of warning: we like our food hot, you may not need as much cayenne pepper as called for in recipe.

Steps:
- In a blender or food processor, puree garlic and onion. Heat garlic and onion puree with Italian sausage in a skillet over medium heat. Cook until sausage is no longer pink.
- Transfer the sausage mixture to a large soup pot. Add potatoes and water to cover. Stir in the seasoned salt, black pepper and cayenne pepper to taste. Bring to a boil over medium-high heat and cook until potatoes are tender. when potatoes are done, stir in the butter, evaporated milk and parsley. Cook long enough for the butter to melt. Serve hot with bread or crackers.

5-Ingredient Fix Contest Entry. As I get older, I tend to want spicier foods. I came up with this recipe when I was thinking of food that would be good for diabetics like me.

Steps:
- 1. Heat a non-stick pan over medium-high heat. Saute pepper and garlic for 3 minutes or until softened.
- 2. Add Simply Potatoes. Turn so the potatoes are on the bottom, and the green peppers and garlic are on top. Saute until potatoes on bottom are brown (5 minutes, roughly).
- 3. Flip the potatoes again and spread the hot pepper jelly over the top. Cover and cook until jelly is melted (approximately 3 minutes).
- 4. Break up the potato mixture a bit. Top with shredded Gruyere. Turn off heat and re-cover. Let sit for approximately 7 minutes and, if desired, season and/or add toppings of your choosing.
- 5. Serve.

BANANA NUTELLA EGG ROLLS
For some reason, I've been on a bit of an Asian food kick. Probably because when we get close to a holiday I tend to want anything and everything but holiday type dishes. That way, I'll be even more excited for that special holiday dinner when the day comes. I had egg roll wraps left over, and I was trying to figure out something different to make with them. Then while my son and I were at the store the other day he actually requested bananas. I nearly fell over...if you have a 9 year old boy in your house, you understand why. When we got home and I was putting things away I spotted a bottle of Nutella and the idea for Banana Nutella Egg Rolls was born. I wasn't sure how it would turn out, but I figured all the elements for something yummy were there so how bad could it be? They turned out to be super good! My kids loved them, I loved them, my husband loved them...need I say more? Such a great snack for kids to take to school too. Really they are good at any point in the day, even for breakfast. This also gave me other fun ideas to try in the future...stay tuned!

Steps:
- Place enough vegetable oil to cover the bottom of a large skillet and heat on medium-high heat.
- Lay the egg roll wrap on a flat surface and spread a thin layer of Nutella on it, leaving about a 1/2-inch edge all the way around with no Nutella.
- Cut the bananas in half and place in the center of the wrap. Fold the two ends up, then fold one side of the wrap up and over, then do the same on the other side. (You all know what an egg roll is supposed to look like, right? It's kinda hard to explain!) Dip your finger is some water then press the edge closed until it's sealed. Repeat process until your bananas are gone - 3 large bananas make 6 rolls.
- Place rolls into the hot oil, and fry on all side until golden brown, 1-2 minutes on each side.
- Best served warm, but really they are good cold too!

- Heat oven to 220C/200C fan/gas 7. Boil the potatoes for 5 mins. Drain well, place back in the pan, cover with a lid and shake vigorously to lightly roughen up the edges.
- Meanwhile, grind the spices using a pestle and mortar until lightly crushed, then mix with the oil. Put the spice mix in a roasting tin and place in the oven to heat up. Carefully put the potatoes into the roasting tin, tossing them in the hot oil and spice mixture. Roast in the oven for 40-45 mins or until crisp and golden, turning once or twice during cooking.

5-Ingredient Fix Contest Entry. I lkie this recipe because it reminds me of hash that I've come to love, especially for breakfast. And since I first heard of the Philly steak sandwich, which I have never tasted the authentic Philly, I learned how to make my version of the Philly a few years ago. Plus I'm a meat and potatoes and cheese lover, so this dish is perfect for me!

- Remove steaks from freezer and let thaw for at least an hour. The meat will be a lot easier to cut thin if partially frozen. To prepare steak, using a very sharp knife, cut steak at an angle into thin slices and then chop again into smaller pieces, sort of like stir-fry but smaller. Set aside for later use.
- Rinse red bell pepper, and cut into a coarse dice. Peel onion and chop into a coarse dice. Set aside.
- Prepare hash browns according to package directions, except break hash browns up rather than make into a patty. You want them to be nice and brown. When hash browns are done, remove from skillet and set aside.
- Add a tad bit of oil to the same non-stick skillet used to cook the potatoes. Sauté the chopped red pepper and onion together for 2-3 minutes or until the onion starts to caramelize. Add the chopped steak to skillet and continue to stir-fry until done, about 4-5 minute more. Return hash browns to skillet with meat, onions, and peppers and toss together over low heat until well incorporated.
- Remove lid from Cheez Whiz jar and heat in microwave for 45 seconds. Pour about half of the Cheese Whiz over steak and potatoes. Serve immediately.
- Recipe makes 4 - 6 servings.

- Crack eggs into a large bowl and whisk briskly until incorporated.
- Open Hatch Green Chili sauce and heat on low in a small sauce pan.
- In a large non stick skillet begin to brown sausage, chopping with spatula into crumbles as you would for chili.
- When about half cooked, add 2 heaping cups Simply Potatoes Diced Potatoes with Onions, seasoning potatoes to taste. Continue cooking until sausage is browned through and potatoes are soft and picking up some color.
- Remove from skillet with slotted spoon into a large bowl and cover; pour off any drippings from skillet.
- Give eggs a final whisk in bowl and pour into the skillet, season as normal, and scramble eggs.
- When eggs are scrambled soft, return sausage and potatoes to the skillet and finish cooking, incorporating eggs, sausage and potatoes together.
- Remove from heat and serve, spooning two to three large spoonfuls onto a warm tortilla. Top with your favorite Green Chili sauce (Hatch green chili enchilada sauce is tasty and available everywhere), or, if preferred for the youngsters, sprinkle medium cheddar cheese shreds on top like a taco.
- This is a hands on breakfast, so pick them up like a taco and enjoy, no silverware necessary. In a hurry? Wrap in foil and take breakfast with you!
