SPICY TEQUILA LIME TOMATO SOUP

I came up with this gem trying to think of an alternative to boring tomato soup. Not only is this soup simple, cheap and hearty, it super low calorie and can be made in as little as 30 minutes! Add some shrimp or quesadillas for a complete meal.

Spicy Tequila Lime Tomato Soup image

Steps:

  • In a large soup pot, saute garlic, onion and celery in olive oil until softened. Add green pepper and jalapeno and soften slightly.
  • Add tequila and reduce slightly - about 3-4 minutes.
  • Add tomatoes, stock and juice from lime. Bring to a boil and simmer for at least 20 mins (up to 1.5 hours).
  • Add cilantro just before serving.

28 ounces fire-roasted tomatoes, canned
28 ounces crushed tomatoes, canned
1/4 cup tequila
1 lime
2 tablespoons extra virgin olive oil
2 jalapeno peppers, seeded and chopped
1 green bell pepper, chunked
1 large onion, chunked
4 celery ribs, chunked
5 garlic cloves, chopped
2 cups vegetable stock
3 tablespoons cilantro
salt and pepper (to taste)

This spicy drink -- with the flavors of tomato juice, tequila, fresh cilantro, and hot pepper sauce -- is the perfect refresher for summer. It's equally good paired with tortilla chips at cocktail hour or with huevos rancheros for brunch.

Steps:

  • In a large glass, combine tomato juice, tequila, and lime juice. Add ice and several dashes hot-pepper sauce, and garnish with cilantro.

Spicy Tomato and Lentil Soup image

Steps:

  • Heat the olive oil in a large saucepan or Dutch oven. Lightly brown the onions in the oil. Add the tomatoes, chili pepper, lentils, cumin and basil to the pan along with the water. Bring to a boil, then reduce heat to medium-low and simmer for about 20 minutes, or until the lentils are tender.
  • When the lentils have softened, use a stick blender to puree the soup. Season to taste with salt and pepper. For a special touch, put sour cream in a squirt bottle, and squeeze a spiral onto the top of each bowl of soup, and garnish with a sprig of fresh basil.
