SPICY WATERMELON MARGARITA
The sour formula is the root of many cocktails, including margaritas and mules, perhaps because it's so easy to remember and so simple to adapt. All you need: 1 part sweet, 1 part sour, and 2 parts alcohol.

Steps:
- Puree watermelon in a blender. Wipe the rim of a margarita glass with a lime wedge; dip rim in salt.
- In a cocktail shaker half-filled with ice, add tequila, orange liqueur, lime juice, jalapeno, and 2 ounces of the watermelon puree. Shake until very cold.
- Strain into prepared glass. Garnish with watermelon wedge and jalapeno slice.

- Put some salt and a little chili on a small plate and mix. Rub the rim of a glass with a slice of lime then dip in the salt-chili mixture to form a salt rim.
- Put the jalepeno slices in a cocktail shaker and muddle a little to release a little juice. (No need to do this if you plan to shake a lot or want less spicy)
- Add the watermelon juice, tequila, tripe sec and lime juice along with a few pieces of ice. Shake a minute until well chilled.

- Next fill a cocktail shaker with ice. Add the tequila, lime juice, watermelon juice, jalapeno slices, and agave nectar. Put on the lid and shake for 15-30 seconds; strain the liquid into a glass and garnish with a fresh watermelon wedge. (You can also add a few jalapeno slices to the bottom of the glass, but only if you like it extra spicy!) Taste and add extra sweetener if necessary.
