SPINACH AND BACON PASTA TOSS
Spinach, bacon and cherry tomatoes give this chicken and pasta toss great flavor-and gorgeous color. Bonus: It's a quick and easy weeknight dish.

- Cook noodles as directed on package. Drain, reserving 1/2 cup of the cooking water.
- Meanwhile, heat dressing in large skillet on medium heat. Add chicken; cook and stir 5 to 7 min. or until cooked through. Add tomatoes; cook 1 min., stirring occasionally. Stir in noodles and reserved 1/2 cup cooking water. Remove from heat.
- Add spinach, 1/2 cup of the cheese and the bacon; toss lightly to combine. Sprinkle with remaining 1/2 cup cheese.

- Cook pasta according to package directions.
- Drain, reserving 1/2 cup cooking water.
- In a large skillet over medium heat, cook bacon until crisp.
- Remove and drain on paper towels.
- Drain drippings but do not clean pan.
- In same pan over medium heat, heat olive oil 1 minute.
- Increase heat to medium-high and add spinach, wine and reserved cooking water.
- Cook and stir until heated through.
- Toss pasta and cheese with sauce.
- Season with pepper to taste.
- Crumble bacon over pasta.

- Cook the pasta following pack instructions. Meanwhile, heat the oil in a large frying pan, then add the onion and cook for 3 mins until starting to soften. Add the bacon, cook for a further 5 mins, then pour in the hot stock and bring to the boil. Simmer for a few mins until the liquid has reduced slightly.
- Stir in the peas, followed by the gorgonzola, until the cheese has melted and the peas are defrosted. Quickly stir through the spinach to wilt. Drain the pasta and mix with the sauce, then serve.

I got this recipe off a Kraft calendar. I made a few alterations and we think it's really good. Simple enough for a weeknight and pretty enough for guests.

Steps:
- Cook noodles as directed on the package, drain reserving 1/2 cup of the cooking water. *i also like to use linguini noodles instead of the egg noodles*.
- Heat dressing in large skillet over medium heat, add chicken, onion and pepper flakes. Cook until the chicken in cooked through and the onions are tender, stirring occasionally.
- Stir in noodles and reserved cooking liquid, remove from heat.
- Add spinach, half the cheese, and bacon, toss together.
- Top with remaining cheese to serve.
