LASAGNA WITH SPINACH AND ROASTED ZUCCHINI
You may think of lasagna as a rich, heavy dish, but it needn't be. There's no need to compensate for the absence of a traditional Bolognese sauce by packing these casseroles with pounds of ricotta and grated cheese. Some of each of those elements is welcome, but I cut the usual amounts by half in this recipe, and it was plenty satisfying. You can get ahead on lasagna by making up big batches of marinara sauce and freezing it, or in a pinch use a good commercial brand. The noodles are no-boil, which really makes these lasagnas easy to assemble. They can be made ahead and reheated, or frozen.

Steps:
- Preheat the oven to 450 degrees. Toss the zucchini with the olive oil and season to taste with salt and pepper. Line a baking sheet with parchment paper and top with the slices of zucchini. Place in the oven and roast 8 minutes. Remove from the oven, close the oven door and, using tongs, flip the zucchini slices over. Return to the oven for 5 minutes, or until the zucchini is tender when pierced with a knife and browned in spots. Remove from the oven and reduce the heat to 350 degrees.
- Steam the spinach for 2 to 3 minutes above an inch of boiling water, just until it wilts. Rinse briefly with cold water, squeeze out excess water and chop coarsely.
- Blend the ricotta cheese with the egg, water, cinnamon, salt and pepper. Set aside.
- Lightly oil a rectangular baking pan. Spread a small spoonful of tomato sauce to cover the bottom of the pan. Top with a layer of lasagna noodles. Top the noodles with a thin layer of ricotta, then a layer of zucchini and spinach, a layer of tomato sauce and a layer of Parmesan. Repeat the layers, ending with a layer of lasagna noodles topped with tomato sauce and Parmesan.
- Cover the baking dish tightly with foil and place in the oven. Bake 40 minutes, until the noodles are tender and the mixture is bubbling. Uncover and, if you wish, bake another 10 minutes, until the top begins to brown. Remove from the heat and allow to sit for 5 to 10 minutes before serving.

Steps:
- To make the sauce: Melt the butter in a heavy medium saucepan over medium-low heat. Add the flour and whisk for 3 minutes. Whisk in the milk. Increase the heat to medium-high. Whisk the sauce until it comes to a simmer and is thick and smooth, about 3 minutes. Whisk the salt, pepper, and nutmeg into the bechamel sauce.
- Preheat the oven to 450 degrees F.
- Whisk the ricotta, spinach, 1 cup Parmesan, prosciutto, egg, salt, and pepper in a medium bowl to blend.
- Add a tablespoon or 2 of oil to a large pot of boiling salted water. Boil the noodles until just tender but still firm to bite. Drain. Arrange the noodles in a single layer on a baking sheet to prevent them from sticking.
- Butter a 13-by-9-by-2-inch glass baking dish. Pour the bechamel sauce over the bottom of the prepared dish. Lay out 4 lasagna noodles on a work surface, then spread a large spoonful (about 3 tablespoons worth) of ricotta mixture evenly over each noodle. Starting at 1 end, roll each noodle like a jelly roll. Lay the lasagna rolls seam side down, without touching, atop the bechamel sauce in the dish. Repeat with the remaining noodles and ricotta mixture. Spoon 1 cup of marinara sauce over the lasagna rolls. Sprinkle the mozzarella and remaining 2 tablespoons of Parmesan over the lasagna rolls. Cover tightly with foil. Bake until heated through and the sauce bubbles, about 20 minutes. Uncover and bake until the cheese on top becomes golden, about 15 minutes longer. Let stand for 10 minutes. Meanwhile, heat the remaining marinara sauce in a heavy small saucepan over medium heat until hot, and serve alongside.
SPINACH PROSCIUTTO LASAGNE
I am a believer that lasagna does not only consist of meat+cheese+noodles. When I saw this recipes and decide to try my hand at it. The saltiness of the thinly sliced cured Prosciutto, added a delicate texture and subtle flavor and I didn't miss all that meat and red gravy (Spaghetti Sauce). Yes this has spaghetti sauce (very...

SPINACH AND PROSCIUTTO LASAGNA ROLLS
I saw these on the Food Network show "Everyday Italian" yesterday and had to make them. They are so good! I added a few extra ingredients like the basil and mushrooms. You could probably use alfredo in place of the marinara sauce, and the bechamel sauce added a nice touch. This takes a little long, but it is worth it!

- Process flour, eggs, egg yolks, 1 tablespoon water, and oil in a food processor until mixture is evenly moistened, resembles couscous, and sticks together when pinched, adding remaining 1 tablespoon of water if needed to moisten dough, about 20 seconds. Turn dough out onto a clean work surface. Shape into a ball, and knead until smooth, about 3 minutes. Wrap dough tightly in plastic wrap. Let stand at room temperature at least 1 hours and 30 minutes or up to 4 hours.
- Process Parmigiano-Reggiano chunks in a food processor until finely ground into small crumbles, about 30 seconds. Transfer half of the cheese (about 3/4 cup) to a bowl, and reserve for finishing lasagna. Add ricotta, prosciutto, cream, and rosemary to food processor; pulse until well combined and prosciutto is very finely chopped, about 10 pulses. Season with salt to taste. Transfer filling to a large piping bag with a 3/4-inch hole snipped in the tip.
- Coat a 9- x 5-inch loaf pan with oil. Unfold pasta sheets, and arrange them parallel, overlapping them to create a 9-inch-wide layer of pasta. Line the bottom and two long sides of the loaf pan with the pasta, allowing a 5-inch overhang on one side and the remaining long ends on the other.
- Bring a medium saucepan of water to a boil, and salt it. Add spinach; cook, stirring occasionally, until very tender, about 2 minutes. Using a spider, transfer spinach to a large bowl of ice water. Let cool 2 minutes. Drain and squeeze excess moisture from spinach. Transfer spinach to a blender; add 1/2 cup water. Process until smooth, about 30 seconds, adding up to an additional 1/3 cup water, 1 tablespoon at a time, as needed to thin sauce to consistency of heavy cream. Transfer mixture to a small saucepan. Stir in oil and salt. Keep warm over low, stirring often, until ready to use.
