SPINACH-APPLE SALAD WITH ROQUEFORT CHEESE
I adopted this recipe from recipezaar because it appealed to me. I haven't tried it yet, but plan to soon.

Steps:
- Tear spinach into bite size pieces, if needed and place in a large bowl and set aside.
- Combine apple and 1 tbl vinegar in a bowl and toss gently, et aside.
- Combine remaining 2 tbls vinegar, papaya, an next 3 ingredients in a small sauce pan, stir well and bring to a boil, remove from heat and immediately pour over spinach, tossing to coat.
- Top with apple mixture and cheese, tossing gently.
- Serve NOW!

SPINACH AND ROQUEFORT SALAD
I sometimes use melon instead of the pear in this salad, use what you like most or is in your fridge. Another thing I like to do is add crispy fried bacon bits just before serving.

Steps:
- Wash and dry the spinach, remove tough stalks and tear large leaves in pieces.
- Mash the cheese with a fork, gradually add the cream to form a smooth paste.
- Mix in the chives and add salt and pepper to taste.
- Place the spinach in a salad bowl, add the walnuts, the pear and pour over the dressing.
- Toss and serve.
