ST PAUL'S RICE
I got this recipe from a friend I worked with long ago and have been serving it for years. It is great with chicken or pork. I like it all by itself. Leftovers are great. In fact, I just put one in the oven.

Steps:
- Crumble sausage and brown in skillet or microwave until no longer pink. Drain and break up with fork until crumbled.
- Bring 4 1/2 cups of water to a boil, add rice and chicken soup mix, cook for 7 minutes.
- Add all ingredients into a large greased casserole dish and mix well. Cook uncovered at 350 degrees for 1 hour.

Steps:
- Place sausage in skillet and scramble as it cooks and browns. With a slotted spoon, transfer sausage to a casserole dish. Pour off most of the fat in the skillet. In remaining fat, saute celery, pepper, and onion until softened. Set aside. In a large kettle, combine soup mix, rice and water. Boil for 7 minutes. Add vegetables, rice mixture, and almonds to casserole. Mix well with sausage. Bake at 350 degrees for one hour.
ST. PAUL'S RICE CASSEROLE RECIPE

- Toss and brown sausage. Drain on paper towel; pour out grease. Saute in cut pieces of bell pepper, onion and celery. Boil envelopes of soup, rice and water for 7 minutes. Place all together in casserole with almonds. Bake at 350 for 1 hour, covered.
ST. PAUL SANDWICH
A take-off of the well known Cantonese egg fu yung and local to the St. Louis area, this can now be found nationwide, in the local chop suey houses and Chinese express type restaurants. Surprisingly, the sandwich has nothing to do with St. Paul and why the sandwich is named that is unclear. But for anyone growing up in the St. Louis area might find this sandwich to be a happy memory, and a recipe almost lost to the culinary community.

- In a small bowl, whisk together eggs, salt, and pepper.
- Whisk together the soy sauce with cornstarch in a small bowl or cup.
- Heat a small amount of oil in a skillet and add vegetables, and saute over medium heat until they cook through. Set them aside to cool.
- When cool, add the cooked vegetables, soy sauce with cornstarch, sesame oil, and main ingredient of choice (pork, ham, etc.)to the beaten eggs, stirring to mix well.
- Heat a small amount of oil in a skillet and when hot pour in about 1/2 cup of the foo yung mixture.
- When the underside browns, flip the patty and brown the other side.
- Serve patty on soft white bread with lettuce, tomato, pickle, and mayo.
ST. PATRICK'S DAY RICE KRISPIE TREATS
I needed to make a green St. Paddy's Day dessert that everyone would eat... very easy, family favorite! The cooking time listed here is the cooling time. These are best if eaten the same day they're made, but can be made ahead for special occasions.

- In a large saucepan, melt butter over low heat. Add the marshmallows and continue to stir until the marshmallows have completely melted. Add the green sprinkles, stir well. Remove from heat.
- Stir in the Kellogg's Rice Krispies cereal coating them well with the melted marshmallow mixture.
- Using a buttered or silicone spatula, press the mixture evenly into a 13 x 9 x 2 inch pan which has been buttered or sprayed with non-stick spray or lined with wax paper.
- Cut into squares when the mixture cools.
ST PAUL'S RICE
My Aunt Ellen, who was from St Louis, brought this recipe to us from a friend in St Paul, so we always called it St Paul's Rice. It is now a staple at all our BBQs and many family holiday dinners.

Steps:
- 1. Cover Rice with water and cook lie about 5 minutes. Add chicken flavored noodle soup mix and continue cooking about 10 more minutes
- 2. Brown loose ground sausage, add pepper, onion, and celery.
- 3. When rice is almost done, mix sausage mix, rice, pimentos and slivered almonds.
- 4. Bake in a greased pan at 350° For approximately 45 minutes.
