Steps:

  • In a large skillet, saute pepper in oil for 3 minutes. Add garlic and cook 2 minutes longer or until pepper is crisp-tender. Stir in the chicken, beans and onions; heat through. Transfer to a bowl and keep warm. , In the same skillet, combine enchilada and picante sauces. Coat both sides of one tortilla with sauce mixture; place in a greased 9-in. pie plate. Top with a third of the chicken mixture and 1/4 cup cheese. Repeat layers twice. Top with remaining tortilla, sauce and cheese. , Cover and bake at 350° for 18-22 minutes or until heated through. Remove to a serving plate and cut into wedges. Serve with sour cream and lettuce if desired.

Spinach Mushroom Enchiladas image

Steps:

  • In a large skillet, saute mushrooms and onion in butter until tender; add garlic, cook 1 minute longer. Set aside half of the mushroom mixture for sauce., Add wine to remaining vegetables; cook and stir for 2 minutes. Add spinach and 1/4 teaspoon seasoned salt; cook until spinach is wilted and liquid is evaporated., In a large saucepan, bring the water, lime juice, chicken bouillon, garlic powder and remaining seasoned salt to a boil, stirring to dissolve bouillon. Stir in the sour cream, cilantro and reserved mushroom mixture; heat through., Place a scant 3 tablespoons spinach mixture down the center of each tortilla; roll up and place seam side down in a greased 13x9-in. baking dish. Spoon sauce over top; sprinkle with cheese. Bake, uncovered, at 350° until heated through, 14-18 minutes. If desired, sprinkle with pepper flakes.

Steps:

  • Preheat oven to 350 degrees F. Heat 1/4 cup oil in a skillet add mushrooms and saute them until they start to shrink, about 3 to 5 minutes. Add onion, garlic, oregano, coriander and saute for another 2 minutes. Pour mixture into a bowl and stir in cheese, mix well. Heat remaining oil in a cleaned skillet. When oil is hot dip each tortilla in turn and fry for 10 to 15 seconds on each side or until softened. Remove to paper towels to drain. Divide the stuffing evenly among the tortillas, roll them up and place in a lightly oiled baking pan. Pour the roasted vegetable sauce over all and bake for 10 minutes or until the sauce bubbles. Remove from oven, top with chopped cilantro and serve.

STACKED ENCHILADAS WITH JALAPENO MUSHROOM ENCHILADA SAUCE

I hear that stacked enchiladas are a New Mexico/Arizona thing. Being from Texas, i'm not real sure but, one thing I do know is these are really good. Everytime we went to my great-uncle's house when I was a kid, this is what we had, and as far as I know the sauce for these enchiladas was his own secret recipe. We call it magic sauce, I don't know why but, it fits. Now I also hear that if you go to a New Mexico resturant and order "stacked enchiladas" you will get a fried egg on top. Seeing as how I am not a big fan of eggs, I don't add that but if you want the "real deal" thats what you need to do.

Stacked Enchiladas With Jalapeno Mushroom Enchilada Sauce image

Steps:

  • Heat oil in a skillet on med/high heat.
  • Place corn tortillas in hot oil just long enoguh to soften, 10-15 seconds. Set tortillas on paper towels to drain, then set to the side.
  • Brown hamburger meat in a skillet with 1/2 onion and cumin, set to the side.
  • Place mushroom soup, jalapenos, cumin, and milk in a blender and puree until smooth.
  • Pour mixture into a pot and bring to a boil, remove from heat.
  • To serve place one corn tortilla on a plate and top with hamburger meat. Place another corn tortilla on top of the meat and top that with lettuce, tomatoes, onion, and cheese. Pour sauce on the top and enjoy.
  • * The amount of milk used in the sauce can be lessened or added to depending on how thick/thin you like.

Traditional New Mexico Red Chile Cheese

Steps:

  • Preheat the oven to 350 degrees F. Each serving will contain 3 corn tortillas. Take the tortilla and dip it in hot oil or dip it in the red chile sauce and put on plate. Top this with cheese and onion and more sauce and put another dipped tortilla on top and repeat this 2 times. Heat in the oven or under the broiler until cheese melts and top with a fried egg. Garnish the plate with the lettuce and tomato. You can serve this with fried potatoes or pinto beans.
  • To make a casserole, you can layer the above in a baking dish with the final layer on top being cheese, do not put eggs on the casserole. Bake for about 20 minutes, until all is warm and melted. Garnish with lettuce and tomato. Can also serve with sour cream, chopped olives and guacamole.
  • Remove the stems and seeds of the chile pods. Soak the pods in water or simmer on stove for about 10 minutes. Place chile and garlic in a blender with 1/4 cup water and puree until smooth. (Use 6 to 8 pods of chile and 2 cloves of garlic at a time, which will make the puree smoother and easier to work with.) Add more water as needed to get a medium consistency. In a sauce pan, add pureed chile with Mexican Oregano and salt to taste. Bring to a slow boil, and then simmer for 20 minutes. Pork can be browned and added to sauce while simmering.
