SOUR CREAM SWISS STEAK

I spent a year searching for new and different beef recipes. This is the dish my family raves about, and they agree that it's a nice change from regular Swiss steak. -Barb Benting, Grand Rapids, Michigan

Sour Cream Swiss Steak image

Steps:

  • In a shallow bowl, combine 1/3 cup flour, salt, pepper, paprika and ground mustard; dredge the steak. , In a large skillet, heat oil and butter. Cook steak on both sides until browned. Carefully add water; cover and simmer for 30 minutes., In a bowl, combine the sour cream, onion, garlic, soy sauce, brown sugar and remaining flour; stir until smooth. Transfer steaks to a greased 2-1/2-qt. baking dish; add sour cream mixture. , Cover and bake at 325° for 1-1/2 hours or until tender. Sprinkle with paprika if desired.

Steak sauce, salsa and lime juice make a great marinade for this steak ranchero dish. Top with warm salsa and sour cream.

Steak Ranchero with Sour Cream image

Steps:

  • Mix first 3 ingredients until blended. Pour 1/2 cup over steak in shallow dish; turn to evenly coat both sides of steak. Refrigerate 1 hour to marinate.
  • Heat grill to medium heat. Remove steak from marinade; discard marinade. Grill steak 4 to 6 min. on each side or until medium doneness (160°F).
  • Remove steak from grill; let stand 5 min. Meanwhile, cook remaining salsa mixture and 3 Tbsp. olives in saucepan on medium heat 3 min. or until heated through, stirring occasionally.
  • Cut steak across the grain into thin slices. Cover platter with lettuce; top with meat and remaining olives. Drizzle with warm salsa dressing. Garnish with sour cream.

Steps:

  • Mix tomatoes, garlic, lime juice, cumin, beans, green onions, jalapeno and cilantro in bowl; set aside.
  • Season meat with salt and pepper, if desired. Cook over hot coals (or broil) 3 to 5 minutes per side or until done as desired.
  • Slice meat thin and top with tomato mixture.
  • Serve over rice and garnish with lime wedges and additional cilantro, if desired. Enjoy!

1 (14 1/2 ounce) can diced tomatoes, drained (or use 1 1/2 cups fresh if desired)
1 garlic clove, crushed
2 -3 tablespoons fresh lime juice
1/2 teaspoon ground cumin (optional)
1 cup cooked kidney bean (or beans of choice)

Sirloin with Sour Cream Sauce image

Steps:

  • In a large resealable plastic bag, combine 2 tablespoons flour, salt, pepper and paprika; add beef and toss to coat. In a skillet, brown beef on all sides in oil. Add the onion, mushrooms, garlic, 1/2 cup water, brown sugar, soy sauce and mustard; cover and simmer for 10-15 minutes or until meat is tender. Remove meat to a serving platter and keep warm., Combine remaining flour and water until smooth; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in sour cream. Heat gently (do not boil). Serve beef and sauce over noodles.

  • Heat the oil in a large skillet (make sure the skillet is big enough for the two steaks). Once it is hot, add the steaks and cook for about 3 minutes per side.
  • Add the onion and peppers to the skillet and cook for 3 more minutes, until the sliced onion starts looking transparent. Stir to make sure everything is cooking evenly.
