STOVE-TOP BUTTERNUT SQUASH MAC & CHEESE

Tender pasta generously slathered in quite possibly the most velvety, rich, and creamy cheese sauce you've ever encountered. And it's ready in well under 30 minutes!

Stove-Top Butternut Squash Mac & Cheese image

Steps:

  • Cook the pasta until al dente, according to package instructions. Drain the water and set the pasta aside.
  • While the pasta cooks, make the sauce. Fill a medium pot halfway with water and add a pinch of salt. Set on the stove over high heat. Add the butternut squash and bring to a boil. Cook until tender, 5-6 minutes. Drain the water and set the cooked squash aside.
  • Reduce heat to medium and return the pot to the stove. Add the heavy whipping cream, thyme, Dijon mustard, 1/4 teaspoon kosher salt, and 1/4 teaspoon pepper. Cook, stirring frequently with a whisk, until thickened slightly, 3-4 minutes. Add back the butternut squash. Remove from heat and either (carefully!) use an immersion blender to completely puree the sauce, or pour into a blender to puree. Return to the pot. Add the cheese, stirring until melted. Taste the sauce and add additional salt and pepper if desired. Add the pasta to the sauce and stir gently until all of the pasta is coated. Serve.

1/2 pound 8 ounces pasta (macaroni, rotini, penne, or shells)
4 cups butternut squash (peeled, seeded, and cubed (about one 2 1/2 pound squash))
1 pint 2 cups heavy whipping cream
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
1 teaspoon Dijon mustard
1/4 teaspoon kosher salt + more for cooking the pasta and squash + more to taste (if desired)
1/4 teaspoon freshly ground black pepper + more to taste
4 cups shredded sharp cheddar cheese (16 ounces)

Butternut Squash Mac and Cheese image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place butternut squash, cut-side down, on a baking sheet.
  • Roast squash in the preheated oven until soft, 40 to 50 minutes. Remove squash flesh from skin and set aside. Reduce oven temperature to 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain.
  • Melt butter in a large saucepan over medium heat. Whisk flour and mustard into melted butter until smooth, about 1 minute. Gradually whisk milk into flour mixture until the mixture has the texture of heavy cream, 5 to 7 minutes. Remove from heat.
  • Stir butternut squash, white Cheddar cheese, and Cheddar cheese into milk mixture until cheese is melted. Stir rotini into cheese mixture. Pour cheese mixture into a 9x13-inch baking dish. Top with bread crumbs.
  • Bake in the preheated oven until bread crumbs are golden, about 10 minutes.

Butternut Mac 'n' Cheese image

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring a pot of water to a boil. Cook the macaroni until al dente according to the package instructions. Drain, rinse with cold water to stop the cooking process and set aside.
  • Carefully cut the butternut squash in half lengthwise and remove the seeds. Drizzle half of the squash with olive oil and place it on a rimmed baking sheet cut-side up (reserve the other half of the squash in the fridge for another use). Roast, watching to make sure the surface doesn't get burned (it should have some brown areas, however), until fork-tender, 20 to 25 minutes. Scrape out the flesh into a bowl and mash with a potato masher. Sprinkle with salt and pepper and set aside.
  • While the squash is roasting, add the onions and 2 tablespoons of the butter to a large, ovenproof skillet over low to medium-low heat. Cook the onions, stirring occasionally, until they're deep golden brown, about 20 minutes. Remove them to a plate.
  • In the same skillet, melt 4 tablespoons of the butter over medium-low heat. Sprinkle over the flour and whisk it to make a thin paste. Cook it for 2 minutes, then whisk in the milk. Cook, whisking gently, until slightly thick, a couple of minutes. Taste and adjust the seasonings. You'll probably want to add more salt!
  • Turn the heat to low and stir in the mashed butternut squash. When it is warm, stir in the cheese. If the sauce is overly thick when the cheese is melted, add a splash of milk. Keep stirring until the sauce is nice and hot, then stir in the macaroni. Taste and add more salt if needed.
  • Melt the remaining 2 tablespoons butter in a pan and combine it with the breadcrumbs. Sprinkle the breadcrumbs over the macaroni and bake (I do it straight in the skillet) until the crumbs are golden and the edges bubbly, about 15 minutes. Serve immediately.

Super Creamy Vegan Stovetop Mac &

Steps:

  • Fill a large pot 2/3 full with water and place over high heat. Once boiling, add a few generous pinches of salt and add the pasta. Cook according to the time on the package until al dente. Drain and return to pan (off heat). Set aside.
  • While the pasta is cooking, fill another large pot 2/3 full with water and place over high heat. Add the squash and sweet potatoes. Bring to a boil and cook until the veggies are fork-tender, 7-8 minutes. Drain and add to the pitcher of a heat-proof, high-powered blender (I use a Vitamix).** Set aside.
  • Place a medium saute pan over medium heat. When hot, add the olive oil. Add the onion and cook until soft, about 5 minutes. Add the garlic and cook, stirring, for another minute. Add the dry mustard, smoked paprika, salt, and pepper. Stir. Remove from heat. Pour in the vegetable broth and stir to release any of the browned bits of onion and spices. Pour into blender pitcher. Add coconut milk and 1 teaspoon soy sauce. Puree until completely smooth. Taste and add additional soy sauce, a teaspoon at a time, to taste, along with more salt and pepper if desired.
  • Pour sauce over cooked pasta in the pan. This recipe makes a lot of sauce (because I like it saucy!) so you might not want to use it all. Stir gently with a wooden spoon until all of the pasta is coated. Serve.

8 ounces penne or macaroni pasta (shells and rotini are also good*)
3 cups diced butternut squash (about 1/2 small squash)
1 medium sweet potato (peeled and diced (about 2 cups))

Roast until squash is tender and starting to caramelize, 25 to 45 minutes (depends on how big of cubes you cut the squash). To steam the squash instead, heat a large pot with 1/2" of water and a steaming basket. Add squash to the basket and cook until squash is tender.
  • Once squash is cooked, place in a food processor and puree with enough water or broth until the squash is a smooth puree. Set aside.
  • To make pasta, add the water and pasta to a medium sauce pan over medium-low heat. Bring to a simmer, stirring frequently so to separate the pasta. Stir in the milk and turn the burner to low. Continue to stir the pasta until the pasta is tender and most of the milk has been absorbed (but still some left), 10 to 12 minutes (I cooked my pasta extremely low and slow, so it was upwards of 15 minutes.) Add more milk if your pasta isn't cooked through.
  • Once pasta is cooked, stir in the butternut squash puree, salt, pepper, and garlic powder. Continue to heat mixture over low heat (it helps if the squash is still a bit warm). Once mixture is hot, remove from heat, stir in the cheese, and taste to adjust seasonings as desired.
