STOVETOP FRIES
I've tried many recipes to oven bake french fries. Most of have been good.......but to me there's just something special about fries that are actually fried. This is a simple and basic way to fry them on the stove top.

Steps:
- Cut the potato into 1/2-inch slices. (You can peel it or not. I don't usually peel mine). Cut each slice lengthwise into 1/2-inch strips.
- Heat the oil in a large frying pan on medium-high heat. After 1 minute, carefully put 1 potato strip in the pan. If it immediately begins to sizzle, add the rest of the potatoes. If it doesn't sizzle, wait another 30 seconds and try a second strip. If the oil isn't hot enough, the potatoes will stick to the bottom of the pan.
- Fry for 1 minute and turn them over with a spatula. Continue turning them every minute or so until they have become golden brown. If they start to burn, turn the heat down to medium.
- Drain the fries on paper towels, sprinkle on some salt and serve.
OVEN FRIES
These fries have savory, crisp, dry edges, and they're satisfying and somewhat addictive, just like regular fries. I use a mix of regular and sweet potatoes for this. Choose waxy potatoes, like new potatoes or red potatoes, which have a lower glycemic index than starchy russets.

Steps:
- Preheat the oven to 500 degrees. Line a sheet pan with aluminum foil, shiny side up. Place in the oven while you prepare the potatoes.
- Cut the potatoes into wedges that are 1/4 inch to 1/2 inch thick at the thickest point and toss with the olive oil and salt.
- Remove the hot pan from the oven, and add the potatoes to the pan in an even layer. They should sizzle. Return to the oven, and lower the heat to 450 degrees. Roast 25 minutes or until tender.
- Remove the pan from the oven, and loosen the potatoes from the foil using an offset spatula. Return to the oven and cook for another five minutes. Serve at once, seasoned with more salt if desired.

OVEN FRIES
I jazz up these baked french fries with paprika and garlic powder. Something about the combination of spices packs a punch. The leftovers are even good cold! -Heather Byers, Pittsburgh, Pennsylvania

- Add the potatoes, salt and pepper. Using a spatula, toss the potatoes around in the pan to coat them with the butter and seasoning.
- Spread the potatoes evenly across the pan. Cover over medium to medium high heat* and cook for 2 minutes. Stir, cover and cook another 2 minutes. Continue to cook the potatoes covered until they are "just" tender. Depending on the type of potatoes, this could take 10 - 15 minutes. I find that yellow potatoes cook faster than red one.

- Clean and cut potatoes into 3/8 inch fries. Very easy with a mandolin or use a sharp chef's knife. Be careful especially with the mandolin.
- Place over high heat. Do not cover. Cook for 15 minutes without touching. It will reach a hard boil after a few minutes.
