NO-BAKE STRAWBERRY CHEESECAKE BARS

No-Bake Strawberry Cheesecake Bars image

Steps:

  • For the cookie crust: Line an 8-inch square baking pan with parchment, leaving about a 2-inch overhang on all sides.
  • Whisk together the cookie crumbs, sugar and melted butter in a medium bowl until combined. Press the cookie mixture into the bottom of the prepared pan. Refrigerate until firm, 45 to 60 minutes.
  • For the cheesecake filling: While the cookie crust chills, add the cream cheese, strawberries, sugar and vanilla to a blender. Blend mixture starting at low speed and bring it up to high until smooth. (If needed, use the tamper to push all the ingredients down towards the blades. This will ensure everything is blended evenly and smoothly.) Pour the mixture into a medium bowl. Add half of the whipped cream to the cream cheese mixture and gently fold in using a rubber spatula. Repeat with remaining whipped cream.
  • Pour the cheesecake filling over the chilled crust, spread and smooth with a spatula.
  • Freeze the cheesecake for at least 4 hours. Use the parchment overhang to remove cheesecake from the pan and use a hot knife to cut into 9 bars. Keep frozen and put in refrigerator for about 30 minutes before serving.
  • To serve the bars, place the whipped cream in a pastry bag fitted with a star tip. Pipe a rosette of whipped cream on top of each bar. Gently place the blueberries and strawberries on top of the whipped cream. Serve immediately.

  • Heat oven to 350°F. Spray bottom only of 15x10x1- or 13x9-inch pan with cooking spray. In large bowl, stir cookie mix, butter and egg until soft dough forms. Press evenly in bottom of pan. Bake 15 to 20 minutes or until light golden brown. Cool completely, about 30 minutes.
  • In small microwavable bowl, microwave baking chips uncovered on High 45 to 60 seconds or until chips are melted and can be stirred smooth. In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Stir in melted chips until blended. Spread mixture over crust. Refrigerate while making topping.
  • In small bowl, crush 1 cup of the strawberries. In 2-quart saucepan, mix sugar and cornstarch. Stir in crushed strawberries and 1/3 cup water. Cook over medium heat, stirring constantly, until mixture boils and thickens. Stir in food color. Cool 10 minutes. Gently stir in remaining 3 cups strawberries. Spoon topping over filling. Refrigerate 1 hour or until set; serve within 4 hours. Store covered in refrigerator.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray the inside bottom of a jelly roll pan with cooking spray.
  • Mix sugar cookie mix, butter, and egg together in a large bowl until a soft dough forms; press evenly into prepared pan.
  • Bake in the preheated oven until crust is light golden brown, 10 to 15 minutes. Cool completely, about 30 minutes.
  • Beat cream cheese using an electric mixer on medium speed in a bowl until smooth. Add whipped topping and stir until smooth; spread over crust. Refrigerate.

The idea for this dessert didn't come to me in a dream but I was trying to think of a better name for a Strawberry Posset (which is what this actually is) but since very few people know what that is, I am calling it a Strawberry Dream. I think after trying it you'll agree that the name is totally appropriate. The boiled strawberry-infused cream and sugar filling firms up into a luxurious, pudding-like texture that when sandwiched between strawberry puree and macerated strawberries, tastes like a dream! Even though the portions are a bit small, the taste is rich and a little goes a long way.

Steps:

  • Prepare strawberry puree: Mix quartered strawberries and sugar in a 2-cup liquid measure or bowl. Let sit and macerate for 1 hour, stirring every 10 to 15 minutes. Use an immersion blender to blend into a smooth puree. Pass through a mesh strainer to remove seeds, if desired. Cover and refrigerate until needed.
  • Prepare cream mixture: Combine sugar and cream in a saucepan. Set heat to medium-high and bring to a boil while whisking occasionally; be careful, since cream can easily boil over. Once cream just starts to boil, reduce heat to between medium and medium-low and maintain a steady simmer. Simmer for 5 minutes.
  • Remove from the heat and whisk in vanilla, lemon juice, and 1/3 cup of the reserved strawberry puree until completely incorporated. Let cool for 10 to 15 minutes.
  • While the cream is cooling, pour the remaining strawberry puree evenly into 4 dessert glasses.
  • Pour the cooled cream mixture into the glasses. Wrap with plastic wrap and pop in the refrigerator until thoroughly chilled, 3 to 4 hours.
  • Meanwhile, prepare topping: Toss diced strawberries and sugar together in a small bowl. Wrap with plastic wrap and chill alongside the strawberry dreams.
  • When ready to serve, remove strawberry dreams and topping from the refrigerator. Stir the topping and spoon strawberries and any accumulated juices on top of each dream.

Steps:

  • 1. In a half sheet pan (17 x 12 x1" deep) mix either crust & pat into pan going up sides of pan also.. Note: I used smaller dishes here for here at home.
  • 2. Mix the cool whip, yogurt, & jello by hand & spread over crust.
  • 3. Place in fridge overnight. Do not cover until tomorrow.
  • 4. NEXT DAY: SCORE THE DESSERT WHERE YOU WILL BE CUTTING IT SO YOU CAN PLACE THE STRAWBERRIES ON.SLICE STRAWBERRIES IN HALF FROM TIP TO TOP, LEAVING LEAVES ON & TOP WITH STRAWBERRY SLICES FOR STRAWBERRY YOGURT. I place it so the tip of strawberry points to a corner.
  • 5. You want it in something that isn't very deep, so you can spatula it out easily so it won't fall apart. It makes a beautiful presentation in a flat pan with all those strawberries in a row. I would make the point of the strawberry point to one corner of the bar, so when it sat on a plate by itself, it looked in diamond shape with a strawberry on top. Very pretty. To me, presentation is everything, along with taste. I wish I had a picture. Oh, I would also save some of the jello granules out & very lightly sprinkle on top of yogurt mixture before putting strawberry on top. I made a day ahead so it could set up good & didn't put strawberry on until ready to serve. But sprinkle jello granules on the day before.

20 fresh strawberries for decoration (halved)

2 individual bags fiber one coarsly crushed in food processor

2 individual small envelopes splenda sweetner

  • In a bowl mix together the graham cracker crumbs and melted butter.
  • Press into the bottom of a 13x9 baking dish. Chill in refrigerator until needed.
  • In a mixing bowl, cream together the cream cheese and sugar until well blended.
  • Stir in the strawberries.
  • Gently stir in 2 cups of Cool Whip and spread over chilled graham cracker crust.
  • Beat together 2 packages of vanilla pudding mix with cold milk until thicken (2 to 3 minutes)
  • Spread over cream cheese filling and refrigerate 1 hour.
  • Top with remaining Cool Whip (1 cup)
  • Sprinkle a few graham cracker crumbs over top and chill 3 to 4 hours.
  • Keep refrigerated.

  • In large bowl dissolve jello in boiling water.
  • Add frozen berries and stir until thawed.
  • Stir in remaining fruit.
  • Pour 1/2 of the mixture in 9x13 pan and chill.
  • When firm, spread sour cream on first layer and then pour remaining jello-fruit mix on top and chill until firm.
  • Note: To save time you could just put the sour cream on top.

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Beat butter, powdered sugar, and vanilla extract together in a medium bowl until well combined. Add flour and continue to beat until dough comes together and is no longer dry.
  • Press the dough into an 8x8-inch pan, smoothing the surface evenly with your fingers. Prick the dough all over with a fork to allow any steam to escape.
  • Bake in the preheated oven until the edges begin to brown, about 20 minutes. Remove from oven and cool completely.

Steps:

  • Preheat your oven 350°F.
  • Combine flour and sugar.
  • Cut in the butter until crumbly.
  • Press into 8-inch square baking tin.
  • Bake until a very light golden colour about 15 to 20 minutes.
  • In a medium saucepot place two cups crushed fresh or thawed strawberries.
  • Add 1/2 cup white sugar, and bring to a boil.
  • Remove from heat; add Jello powder and stir well until dissolved.
  • Chill until slightly thickened.
  • Prepare Dream Whip dessert topping according to the package directions using the 1/2 cup milk and teaspoons vanilla which it calls for.
  • Fold half of the prepared Dream Whip into the slightly thickened strawberry mixture and pour into cooled crust.
