Steps:

  • Place strawberries in a pot over low heat; add lemon juice. Mash with a potato masher as strawberries thaw. Stir in sweetener when strawberries are the consistency of your liking.
  • Increase heat to medium and bring to a boil. Continue to cook until reduced and thickened, 10 to 15 minutes.
  • While jam cooks, place a small plate in the freezer.
  • Put a small amount of jam on the cold plate and run your finger straight through, dividing it in half. If the mixture runs back together, continue to cook until thickened, 5 to 10 minutes more; if it stays divided, jam is ready to serve.

  • Rinse and dry the containers you'd like to put the jam in (enough for 5 cups). I always use glass mason jars but plastic containers work great also. This recipe fills 5-6 half pint jars.
  • In a food processor add strawberries and pulse just a few times, until strawberries are well diced, but not totally mashed.
  • Measure exactly 2 cups of strawberries into a large bowl. (It's really important to measure the berries and sugar exactly, or the jam will not set properly.)
  • Add the sugar, one cup at a time, stirring really well after each addition. Let stand for 10 min., stirring occasionally.

  • Simple Strawberry Smoothie Recipe. I had to start with a smoothie recipe because, honestly, it’s what I use frozen strawberries for the most. Using frozen fruits is a sure-fire way to add texture without adding ice, which will water it down in the end.
  • Old Fashioned Strawberry Cobbler. Fresh strawberries are great when you can get them, but their window is kind of small. I had a huge strawberry harvest this year, but the plants were exhausted after just a couple of weeks.
  • Strawberry Scones. It’s a little unusual for this kind of recipe to actually suggest you use frozen fruits. Typically, they’ll say you can use frozen fruits and then remind you to thaw and drain them first.
  • Strawberry Pie With Frozen Strawberries. As mentioned above, strawberries will release a LOT of fruit when they’re cooked. That’s why you’ll see them mixed with some kind of thickener in a lot of baking recipes.
  • Strawberry Milkshake Without Ice Cream. Most milkshakes are thick and creamy because they include a generous amount of ice cream. When you want to treat yourself, there’s nothing better!
