Steps:
- Measure juice into a 6-8 quart saucepot.
- Add 3 cups water and stir.
- Measure sugar and set aside.
- Stir Fruit Jell pectin into juice and stir.
- Bring to a full rolling boil, stirring constantly.
- At once stir in sugar.
- Bring to a full rolling boil, one that cannot be stirred down.
- Stirring constantly, boil hard for 1 minute.
- Remove from heat.
- Skim off foam
- Immediately ladle into hot glass jars, leaving ½-inch head space.
- Process for 5 minutes in a boiling bath water.
- Makes 7/8-ouince jars.

Steps:
- Mix crushed strawberries with sugar, and let stand for 10 minutes. Meanwhile, stir the pectin into the water in a small saucepan. Bring to a boil over medium-high heat, and boil for 1 minute. Stir the boiling water into the strawberries. Allow to stand for 3 minutes before pouring into jars or other storage containers.
- Place tops on the containers, and leave for 24 hours. Place into freezer, and store frozen until ready to use.

I've never made jam before in my life, and suddenly got the urge to try. When I looked up recipes I realized I was lacking the exact ingredients called for, so I improvised with what I had, and the result was so fantastic, I just had to share! This recipe is pectin free and made with frozen berries.

Steps:
- Place strawberries in a pot over low heat; add lemon juice. Mash with a potato masher as strawberries thaw. Stir in sweetener when strawberries are the consistency of your liking.
- Increase heat to medium and bring to a boil. Continue to cook until reduced and thickened, 10 to 15 minutes.
- While jam cooks, place a small plate in the freezer.
- Put a small amount of jam on the cold plate and run your finger straight through, dividing it in half. If the mixture runs back together, continue to cook until thickened, 5 to 10 minutes more; if it stays divided, jam is ready to serve.

Steps:
- Prepare Strawberries-.
- Place three layers of damp cheesecloth or a jelly bag in a medeium glass bowl.
- Cap strawberries then crush.
- Pour prepared berries in the cheesecloth or jelly bag.
- Tie off cheesecloth and let hang over bowl for 3 hours, pressing gently if needed to get 3 and 3/4 cups juice.
- Prepare waterbath canner, jars, lids and rings.
- In an 8 quart saucepan add strawberry and lemon juice together.
- Stir in lemon juice.
- Add Butter.
- Bring to a full, rolling boil stirring constantly.
- Stir in pectin.
- Return to full boil.
- Boil 1 minute.
- Remove from heat and ladle into clean, hot sterile jars.
- Wipe rims, cap and seal.
- Process 5 minutes in a boiling water bath.
- Let stand on a rack or clean towel until cool-check seals.
- Makes about 8 half pints.

- Rinse and dry the containers you'd like to put the jam in (enough for 5 cups). I always use glass mason jars but plastic containers work great also. This recipe fills 5-6 half pint jars.
- In a food processor add strawberries and pulse just a few times, until strawberries are well diced, but not totally mashed.
