STRAWBERRY CHEESECAKE BROWNIES

- For the brownies: Preheat the oven to 350 degrees F. Grease an 8-inch square metal baking pan with nonstick cooking spray. Line the pan with parchment, leaving 2 inches overhanging on 2 sides. Grease the parchment with cooking spray.
- In a medium saucepan over low heat, melt the butter with the chocolate, whisking until smooth and fully melted. Whisk in the cocoa powder until combined. Remove from the heat and stir in the granulated and brown sugar until combined. Whisking constantly, add the eggs and mix until fully incorporated. Add the flour and whisk until completely smooth; the mixture will be very thick. Set aside.
- For the cheesecake layer: Beat the cream cheese in a bowl with an electric mixer or in the bowl of stand mixer until smooth. Add the granulated sugar and vanilla and continue to mix until fully incorporated and fluffy. Add the egg and mix until fully combined.
- Spoon the brownie mixture into the bottom of the prepared baking pan, using a spatula to spread it into an even layer. Carefully pour the cheesecake mixture over the brownie layer; distribute evenly and smooth.
- Stir the strawberry jam with a spoon to loosen it. Drop spoonfuls of the jam over the cheesecake mixture. Using a toothpick or skewer, swirl the jam into the cheesecake, being careful not to press too deep and disturb the brownie layer.
- Fill a separate baking dish with hot water and place on the bottom rack of the oven. This will add moisture to the oven during baking so the cheesecake layer does not crack. Place the cheesecake brownie pan on the center rack above and bake for 40 minutes. Turn the oven off and leave in the oven for an additional 10 minutes.
- Remove the brownies from the oven and allow to cool completely in the pan. Refrigerate the pan until the brownies are chilled, 2 to 4 hours. Using the parchment edges, transfer the brownies to a board, then remove the parchment from under. Trim off the edges and cut into 8 bars.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round layer cake pans.
- Cream sugar, butter, and strawberry powder together for cake until smooth and fluffy, about 5 minutes. Add separated egg yolks 1 at a time, beating after each addition. Add vanilla extract and red food coloring. Beat until color is consistent.
- Blend together flour, baking powder, and 1 pinch salt together in a separate bowl.
- Add flour mixture to the creamed mixture in 3 batches, alternating with milk and blending after each addition. Scrape down the sides and bottom of the bowl. Beat batter for 1 minute more.
- Beat egg whites and remaining pinch of salt together in a separate bowl using a mixer with a whip attachment until stiff peaks form. Gently fold in whipped egg whites until smooth and consistent. Pour batter into the prepared cake pans.
- Bake in the preheated oven until a toothpick inserted into the center of the layers comes out clean, 25 to 30 minutes. Cool on a wire rack for 15 to 30 minutes. Flip cakes out and invert onto the wire rack to cool to room temperature.
- While the cake layers are cooling, combine cold heavy cream and confectioner's sugar in a clean mixing bowl. Whisk until cream begins to thicken and soft peaks form. Add pudding mix slowly while continuing to whisk; filling should be thick (almost dry) at this time. Add milk until mixture has a thick, smooth consistency. Fold in strawberries. Set filling aside.
- Beat cream cheese, butter, and shortening together in a mixing bowl using an electric mixer until creamy. Scrape down the bowl and add confectioner's sugar. Blend until smooth. Set frosting aside.
- Spread filling between the cooled cake layers. Frost the cake and decorate as desired.

STRAWBERRY NESQUIK BROWNIES
This is my adaption to Chocolate Nesquik Brownies, using Strawberry flavor, while adding white chocolate chips-perfect for Valentine's Day occassions!! Very gooey, uber rich unique brownies!! This was created for my daughter's school Valentine's Day Party.

Steps:
- Preheat oven to 350 degrees; Spray 9x13 baking pan with non-stick baking spray and set aside.
- In a large bowl, whisk together sugar, butter and half and half.
- Add eggs and vanilla to sugar mixture and whisk throughly.
- In a medium bowl, combine flour, strawberry powder, baking powder and salt throughly; Stir into sugar mixture throughly.
- Fold in white chocolate chips into batter.
- Spread into prepared pan. Bake for 20-25 minutes or until tester comes out slightly sticky.
- Cool in pan; Cut into bars and enjoy!

- Pan size can be down-sized for more fuller brownie.
STRAWBERRY CHEESECAKE BROWNIES
Steps:
- HEAT oven to 350 degrees F. Spray a 13x9-inch baking pan with no-stick cooking spray. Combine brownie mix, oil, water and 2 eggs in large bowl; stir 50 strokes with spoon. Stir in nuts, if desired. Spread into prepared pan. Bake 20 minutes.
- BEAT cream cheese until fluffy in large bowl. Gradually beat in sweetened condensed milk. Mix in remaining 2 eggs, lemon juice and vanilla until smooth. Pour evenly over warm brownie.
- STIR jam until smooth. Drop by teaspoonfuls over surface of filling. With a knife, swirl jam gently through filling to create marble effect. Bake additional 35 to 40 minutes or until top is lightly browned. Cool 1 hour. Loosely cover and chill in refrigerator for 2 hours or more. Cut into bars.
NESQUIK BROWNIES
These are great moist brownies. They reminded me of Duncan Hines Deluxe brownies. Can use regular chocolate Nesquik and it won't hurt, (I asked at the site) Recipe is from verybestbaking.com

EASY MICROWAVE MUG BROWNIE (WITH NESQUIK!)

- 1.) Combine all the dry ingredients in a microwave-safe mug until thoroughly mixed. 2.) Pour in wet ingredients on the dry ingredients and stir until there are no clumps. 3.) Microwave for 1 minute and 20 seconds in a 1000 watt microwave.** Footnotes: * Since I don't drink regular milk, I used soymilk. I prefer it to regular milk since I was lactose intolerant until I was a teenager. Since soymilk has protein, I think it adds body to the brownie since this recipe doesn't use eggs. ** Microwave times may vary according to your own microwave. Microwave your brownie in increments at first try to make sure you don't overcook/undercook your brownie. --- The less you microwave it, the gooier the brownie. You can even eat the batter itself! Don't worry; the batter has no eggs! If you add more baking powder, the fluffier the brownie is. The less baking powder, it will rise less. I haven't tried this, but some mug brownie recipes opt out the baking powder to make their brownie gooier. You can try experimenting to your preferences especially if you don't have/want to buy baking powder. (Personally, I keep the baking powder and just microwave my brownie for less time if I want a gooey brownie.)
