Strawberry Pink Squirrel Recipes

Steps:

• Mix creme de cacao, creme de noyaux and ice cream in a blender until smooth; pour into drink glass or parfait glass and top with 1-2 fresh strawberries.

• Heat oven to 350°F.
• Grease and flour 2 (8- or 9-inch) round pans. Prepare cake batter as directed on package; pour half into medium bowl. Add dry gelatin mix; stir until blended. Spoon half the white batter and half the pink batter, side by side, into each prepared pan; swirl gently with spoon.
• Bake 30 min. Cool cakes 30 min. in pans. Remove to wire racks; cool completely.
• Mix sour cream and sugar in medium bowl until blended. Gently stir in COOL WHIP. Stack cake layers on plate, filling with 1 cup of the COOL WHIP mixture and 1 cup berries. Frost top and side with remaining COOL WHIP mixture. Top with remaining berries.

• Place the sugar in a small pot with 1 tablespoon water. Stir to dissolve. Bring to a boil over medium-high heat, and simmer until a deep caramel color. Watch carefully because mixture can burn easily.
• Remove from heat, and carefully pour in the Cognac and vinegar. Put back on low heat and swirl mixture to dissolve caramel. Remove from heat and stir in the pomegranate juice or the molasses, the peppercorns and the diced strawberries, and cook over low heat for one minute. The sauce will be thick and syrupy.
• Cool, and carefully stir in remaining strawberries. Serve over vanilla ice cream, mascarpone or panna cotta.
