Steps:
- Preheat oven to 350°F.
- Beat the butter until creamy. Beat in the sugar until well blended.
- Stir in the egg, then the salt, cardamom, vanilla extract, and almond extract.
- Slowly add the flour, blending well.
- Refrigerate the dough for 30-90 minutes. Take out only enough to work with at one time.
- Roll to 1/8" thickness on a lightly floured board. (Flour the rolling pin lightly, too, or use a rolling pin cover.) Cut the dough with floured cutters.
- Place cookies on ungreased baking sheets (optional: use parchment paper). Leave a little room between cookies. Dust with the sugar of your choice and bake at 350°F for 11-15 minutes until lightly browned at edges. Remove cookies from baking sheets after 1-2 minutes and let them cool.
- These cookies may be frozen. You can refrigerate the dough or even freeze it for later use.

SWEDISH SUGAR COOKIES
A tender, fragrant drop cookie (not rolled). I clipped this from a magazine many, many years ago when I went on a quest to find recipes from the countries of my various ancestors. I have no idea what magazine it was, or who submitted it or even if it's really Swedish!

Steps:
- Heat oven to 375°F. Line 2 large cookie sheets with cooking parchment paper; spray with cooking spray. In large bowl, mix cookie mix, softened butter, egg, flour and 1 teaspoon almond extract until dough forms.
- Divide dough into 3 pieces. Place 2 dough pieces on first cookie sheet. Press each piece into 12x2 1/2-inch rectangle, leaving 4 inches between rectangles. Place remaining piece of dough on second cookie sheet, and repeat shaping.
- Brush each rectangle with 1/2 teaspoon milk; sprinkle with 1/4 cup almonds. Press almonds lightly into tops of dough.
- Bake one cookie sheet at a time 10 to 12 minutes or until edges are golden brown (center will look soft). Cool 1 minute. Using sharp knife, cut each log into 1-inch diagonal slices, making sure to cut completely through almond slices while cutting. Remove from cookie sheet to cooling rack, leaving slices on parchment paper. Cool completely, about 30 minutes.
- In small bowl, stir powdered sugar, 1/4 teaspoon almond extract and 5 to 6 teaspoons milk until desired consistency. Drizzle over cookies; sprinkle 3 tablespoons almonds over tops. Let stand about 1 hour or until glaze is set. Store loosely covered at room temperature up to 2 days.

SUGAR COOKIES
This sugar cookie dates back to a Swedish woman born in 1877! Her daughter, Esther Davis, shared the recipe with me and she came up with all the exact measurements, since the original cookies were mixed by feel and taste. These are my favorite cookies and I hope they'll become yours as well. -Helen Wallis, Vancouver, Washington

SCANDINAVIAN PECAN COOKIES
We enjoyed these rich, buttery cookies at a bed-and-breakfast in Galena, Illinois, and the hostess was kind enough to share her simple recipe. The pretty nut-topped treats are so special you could give a home-baked batch as a gift. -Laurie Knoke DeKalb, Illinois
