- In a bowl, combine flour and sugar; cut in butter until crumbly. Set aside 1/2 cup for topping. Add baking soda, cinnamon and cloves to the remaining crumb mixture. Stir in buttermilk and egg just until moistened.
- Fill greased or paper-lined muffin cups two-thirds full. Sprinkle with reserved topping. Bake at 375 degrees F for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool. Serve warm.

- In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg and molasses. Combine dry ingredients; gradually add to creamed mixture and mix well. , Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 350° for 8-10 minutes. Remove to wire racks; cool. , For frosting, cream the confectioners' sugar, butter and zest in a large bowl. Gradually add lemon juice, beating until frosting achieves desired spreading consistency. - Mix flour, baking powder, pumpkin pie spice, and salt together in a small bowl.
- Whisk sugar, avocado oil, and aquafaba together in a bowl until sugar is dissolved. Pour in flour mixture; mix until evenly incorporated.
- Spoon batter into the prepared tin, filling each cup halfway full.
