SUGARED JALAPENOS

A friend at work gave these to me last Christmas, and I had to have the recipe. These are so good! I can eat them right out of the jar, but they are especially good on burgers with monterrey jack cheese, with turnip greens, or peas or beans (southern style). The amount of sugar is an estimate...basically you equal it to the amount of jalapeno slices you have. Easy and delicious!

Sugared Jalapenos image

Steps:

  • Drain all the juice from the jar of peppers. Rinse with water a couple of times. Remove the sliced jalapenos from the jar, making sure they are well drained.
  • Place a cup of peppers back into the jar, followed by a cup of sugar. Continue to alternate the layers in equal measure until you have used up your peppers.
  • Shake well.
  • Shake the mixture twice a day (every 8 hours) for 5 days.
  • At this point, you can divide them up into smaller jars for gifts, or enjoy them yourself!

28 ounces jalapeno peppers, sliced in a jar

1 1/2 cups sugar

Steps:

  • Pack jalapenos and garlic into three hot 1-pint jars to within 1/2 in. of the top. In a large saucepan, bring sugar, vinegar, seasonings and, if desired, cayenne pepper to a boil. Reduce heat; simmer, uncovered, 5 minutes., Carefully ladle hot liquid over pepper mixture, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

1-1/2 cups thinly sliced garlic cloves (about 4 bulbs)
3-1/2 cups sugar
1-1/4 cups red wine vinegar
3/4 teaspoon salt
3/4 teaspoon mustard seed
3/4 teaspoon celery seed
1/2 teaspoon ground turmeric
1 cayenne pepper, minced, optional

This makes a very tasty and spicy addition to almost any meal. Sweet and Hot!

  • Drain off enough of the juice in the jalapeno jar so that adding the sugar won't cause a spill. Pour the 5 pound bag into the jar and seal tightly. Let jar sit for at least one week to mix flavors; flip the jar daily to blend.

  • To a medium-size pot or dutch oven, add sugar, apple cider vinegar, garlic powder, celery seed, turmeric, and red pepper. Stir and bring to a boil. Reduce to a simmer and cook for 5 minutes, until sugar is completely melted.
