SUNSHINE PASTA SALAD

Steps:
- For the sunshine dressing: Add the mayonnaise, sour cream, mustard, lemon zest, lemon juice, garlic, salt and pepper to a medium bowl and whisk until combined.
- For the salad: Cook the pasta in salted water according to package instructions. Drain and rinse the pasta under cold water. Allow the pasta to dry slightly before assembling; this will help the dressing really adhere to the pasta.
- Pour the dressing over the pasta in a large bowl and toss to coat. Add the yellow and grape tomatoes, corn, bell peppers and banana peppers and toss gently until evenly mixed. Arrange the salad onto a serving platter and garnish with the lemon slices.

- 1. Segment (or section) the citrus you have chosen. I usually use two pomelos, one ruby red, one white, and one pink grapefruit, two honey tangerines, and two blood orange. The sharper the knife the easier this is.
- 2. Place sectioned pieces in a strainer/colander for ten minutes or so to let excess juice drip out. Transfer to bowl.
- 3. If using pomegranate arils, separate them from fruit (you can sometimes also buy these already separated for you). Add to bowl.
- 4. In small microwave-safe bowl or mug, heat honey for fifteen (15) seconds, until nice and runny. Add raspberry jam and mix.
- 5. Pour honey mixture over fruit.
- 6. Carefully mix.
- 7. Serve on its own or topped with/over ice cream. Garnish with fresh mint if you wish. So simple, yet so yummy!!!
- 8. PS: I like to juice the rest, the inner part of the citrus fruit when done sectioning out the pieces. There is usually lots of good juice left in there!
SUNSHINE SALAD

- Drain pineapple and oranges, reserving juices. In a large bowl, combine pudding mix with reserved fruit juices. Fold in pineapple, oranges and strawberries; chill for at least 2 hours. Add bananas just before serving.

- Cook nuts and sugar in nonstick skillet on medium heat 3 to 5 min. or until sugar is melted and nuts are evenly coated with glaze. Cool.
- Meanwhile, use small sharp knife to cut peels and white pith from fruit. Cut each piece of fruit crosswise into 8 slices. Alternately arrange fruit, with slices slightly overlapping, around edge of platter. Toss salad greens with onions; place in center of platter.
- Drizzle salad with dressing just before serving. Break nuts into small pieces; sprinkle over salad.

- Peel citrus, removing as much pith as possible, and slice into wheels. Remove any pits, layer fruit on a serving dish, sprinkle with salt and garnish with chopped onion.

- Combine orange and lemon jello; dissolve in boiling water.
- Measure out one cup; chill until slightly thickened.
- Add cold water to remaining jello, then add 1 8 ounce tin crushed pineapple with juice, and the coarsely grated carrots.
- Stir well.
- Pour into a decorative mold.
- Chill until set but not firm (about 45 minutes).
- Blend yogurt with reserved jello; spoon into mold.
- Chill until firm (3-4 hours).
- Unmold and serve.

- Wash and dry salad greens well and place them in a large bowl.
- Add orange pieces, nuts, and onions.
- Toss well with the Citrus Parmesan Dressing .
- Add the avocado and toss the salad gently, so as not to mush the avocado.
- Sprinkle with some Parmesan shavings(using a vegetable peeler).
