TOFU DREAM PUDDING AND PIE FILLING

A simple sweet walnut/maple flavored pudding or pie filling that's fast and easy to make when you just want something that's good (remembering moderation in all things, including sugar). You could use any nut and change the flavor. Can be used with a graham crust pie shell; adorn with walnuts and serve with whipped cream. Triple recipe for pie filling.

Steps:

  • Place tofu, brown sugar, walnuts, maple syrup, and lemon juice in a food processor. Process until smooth. Cover and chill to thicken for pie filling, or serve immediately as pudding.

1 (12 ounce) package extra firm tofu, drained and cubed
¼ cup brown sugar
½ cup walnuts
¼ cup pure maple syrup
1 tablespoon lemon juice

SUPER EASY TOFU PUDDING

Kick it up: Vanilla or Cheesecake pudding mix with defrosted frozen berries (touch of sweetner if needed). White Chocolate with some sugar free chocolate chips. Pistachio with an ounce of unsalted toasted chopped pistachios. Thick slices of bananas that have been sauted gently in a little sugar free maple syrup. Slices of fresh pineapple, grilled (yum with the Chocolate or Chocolate Fudge Pudding). This came from Thinner Times. I have not tried this, just posing for easy finding.

Steps:

  • Put tofu and liquid in a blender and blend on highest speed until completely smooth.
  • Measure out two cups of the tofu blend and add pudding mix; beat with an electric mixer two minutes.
  • Can be served immediately, but is better if chilled for an hour or so.

16 ounces mori-nu silken lite firm tofu (1 package)
1 cup skim milk
serving package jello sugar free fat free instant pudding mix

SUPER SIMPLE VEGAN TOFU PUDDING- JUST 3 INGREDIENTS!

...that is more than likely organic! I use chemical-free Dr. Oetker's pudding mix, it also has enough sugar in it to not necessitate adding any other sweeteners. Now, this recipe is more of a framework and method than exact recipe-- you can use whatever non-dairy milk you like (like Almond Breeze chocolate has no sugar but chocolate flavor) and pudding mix flavor-- I imagine the coconut pudding would taste awesome with vanilla almond milk! Or why not use plain soymilk or ricemilk and add a tablespoon or two of cocoa powder and/or 1/2 tsp almond extract? 1/2 cup of pumpkin puree if using vanilla mix? Possibilities are endless!

Steps:

  • Run the package of tofu through the blender first to get a nice smooth consistency.
  • Add the pudding mix and milk, and blend on low speed (high speed if you see powdery pieces) until fully blended.
  • Pour into ramekins or bowls and cover with plastic wrap to prevent skin from forming, and refridgerate for at least 2 hours.
