RICH HOT CHOCOLATE
Each winter in early February my friends and I gather for an outdoor show called Mittenfest. We skip the Bloody Marys and fill our thermoses with these hot cocoas instead.

- In a small saucepan, heat heavy whipping cream, milk, chocolate and sugar over medium heat just until mixture comes to a simmer, stirring constantly. Remove from heat; stir until smooth. If desired, add rum. Pour into 2 mugs; top with sweetened whipped cream.

Steps:
- In a small saucepan, combine coconut milk and sugar and heat, stirring to dissolve the sugar; keep warm.
- In a medium saucepan, combine the cream and whole milk and bring to a simmer.
- Add the chocolate chips and remove from the heat.
- Let stand, stirring occasionally, until the chocolate is melted; whisk until smooth.
- Pour the chocolate into 8 mugs and spoon some of the coconut milk on top.
- Garnish with the marshmallows and serve.

- 1. Add the coconut milk, chocolate chips, cocoa powder, maple syrup, vanilla, and a pinch of salt to a large pot. Place the pot over medium low heat until the milk is scalding, but not boiling. Be sure to stir the pot often to make sure nothing is sticking to the bottom and burning.2. Once the hot cocoa is steaming, ladle into mugs, dollop with whipped cream, and top with marshmallows, if desired. Drink and enjoy!

Using the chocolate, draw the snowman, eyes, a nose, a smile, and buttons. Dollop a small amount of melted chocolate on top of the snowman's head. Press a meringue cookie into the chocolate. Chill in the fridge until the chocolate is firm, 10 minutes. 3. Use the marshmallows however you please! They keep well in a sealed container for up to a month. If storing longer than a day, skip the rosemary.
