ROCK'S T-BONE STEAKS

This seasoning makes any steak awesome. This is the best. It doesn't overpower the steak. I can't eat a steak out anymore because I always compare it to this seasoning.

Steps:

  • Preheat an outdoor grill for high heat, and lightly oil the grate. Stir the salt, paprika, black pepper, onion powder, garlic powder, cayenne pepper, coriander, and turmeric together in a small bowl; set aside.
  • Rub the steaks on all sides with the seasoning mixture. Cook on the preheated grill to your desired degree of doneness, 3 to 3 1/2 minutes per side for medium-rare. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).

BRAAI-SPICED T-BONE STEAKS

Grilling meat is practically the South African national sport, crossing lines of wealth, geography and even race. Braai means grill in Afrikaans, and some say it's the only word recognized in all of the country's 11 official languages. There's no reason this braai sout, a fragrant dry rub, can't be used on steaks other than a T-bone. But the T-bone has had special status there since Archbishop Desmond Tutu, as part of a campaign to bring all South Africans together around the braai, pointed out that the shape of that steak mimics the shape of Africa itself. Serve with whole potatoes roasted in the coals, and drink beer or one of South Africa's excellent wines.

Steps:

  • Make the braai spice: In a grinder or mortar and pestle, grind all the seasonings and herbs until fine.
  • Rub steaks with the braai spice and set aside in refrigerator for 1 to 4 hours. Bring to room temperature before grilling.
  • Heat a grill until screaming hot. Place steaks on the grill and cook, turning every 2 minutes or so, until crusty outside and medium-rare inside, 120 to 125 degrees. Let rest 10 minutes and slice across the grain for serving.

Steps:

  • For the butter: Using a rubber spatula or wooden spoon, work butter in a bowl until it is softened and very spreadable. Add all other ingredients, and mix until thoroughly combined. Place butter in the middle of a piece of plastic wrap, shape butter into a log, wrap it up, and twist the ends of the plastic to close. Place in the refrigerator until firm, at least 30 minutes.
  • For the steaks: Pat steaks dry with paper towels, coat with olive oil, and set aside to come to room temperature, at least 5 minutes.
  • Heat a large seasoned cast iron skillet or large frying pan over medium-high heat until hot but not smoking, about 3 minutes. Place steaks in pan and cook, undisturbed so they can get well-browned, about 5 minutes per side for medium-rare. Remove steaks to a dish, top with pats of compound butter, and let rest 10 minutes before serving.

8 tablespoons unsalted butter (1 stick), at room temperature
2 teaspoons ground cumin
1 teaspoon kosher salt
1 teaspoon smoked paprika
1/2 teaspoon freshly ground black pepper
2 (10-ounce) New York strip steaks
1 tablespoon oil

T-BONE STEAKS WITH THREE PEPPER RUB AND BOURBON STEAK SAUCE

Bourbon has it own characteristic flavor that adds a nice flavor to these T-Bones. Make sure the steaks are at room temperature before grilling. This helps keep them tender. You can make the sauce ahead of time and reheat when it is time to serve. The preparation time includes 2 hours to let the rub set in. I prefer to have it done the night before to save time the next day.

Steps:

  • "Rub".
  • Mix together the black and white pepper, paprika, garlic powder, and salt in a small bow.
  • Sprinkle the rub generously on both sides of the steaks and press it into the meat.
  • Cover and let sit, turning occasionally for up to 2 hours at room temperature or overnight in the refrigerator.
  • If refrigerated, remove the steaks from the refrigerator 30 minutes before grilling.
  • "Steak Sauce".
  • Put the stock in a small saucepan over high heat and boil until reduced by half.
  • In a small bowl, stir the cornstarch into the bourbon.
  • Remove the stock from the heat and whisk in the mustard, tomato paste, cornstarch mixture, and Tabasco.
  • Taste and season with salt.
  • Set aside.
  • "Wood Chips".
  • Soak wood chips in water for 30 minutes and drain well, (you can add spices or herbs, mesquite, hickory, alder, apple, and pecan. Woody herbs such as rosemary, oregano, thyme, and dried basil stems can be used on their own or blended. Sometimes herbs can be purchased in a bag the size of a tea bag, for a mess free addition to a fire).
  • If using on a charcoal grill, add them directly to the coals while the food cooks, timing the addition so the flavor of the smoke enhances but does not dominate the steak.
  • If using a gas grill use a small, vented metal smoker box into which the soaked chip may be put for placing directly over burners.
  • You can also make a small packet of chips using heavy-duty aluminum foil. Perforate the top of the packet with a fork an place the packet directly on the burners.
