MEXICAN TACO MEATLOAF
My Mexican grandmother would use leftover corn tortilla chips in our meatloaf and everyone loved it! They all wanted seconds along with the recipe. A delicious Mexican-American comfort food.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.
- Whisk eggs, milk, and taco sauce together in a separate bowl. Add to meat mixture and stir until well combined.
- Press mixture into a 9x5-inch loaf pan and top with a strip of taco sauce down the center.
- Bake in the preheated oven until cooked through and browned on top, 45 to 60 minutes.

GROUND TURKEY TACO MEAT
This recipe has fewer calories because of the ground turkey and amazing flavor! It is a little spicy, but our family enjoys it this way. Because it has so much flavor, you cannot even tell it's not ground beef. It tastes great as a topping on baked potatoes as well as tacos. Enjoy!

- Mix chili powder, cumin, paprika, salt, garlic powder, onion powder, oregano, and cayenne together in a small bowl.
- Cook turkey in a large nonstick skillet over medium heat, stirring to break up clumps, until no longer pink, 3 to 5 minutes. Stir in chili powder mixture and water. Reduce heat and simmer, stirring occasionally, until most of the liquid has been absorbed, about 10 minutes.
- Stir cider vinegar and brown sugar into the skillet. Simmer until flavors combine, 3 to 4 minutes. Transfer to a serving bowl.

TACO TURKEY MEATLOAF
Ground turkey makes this meatloaf lighter and healthier; cheese and taco seaoning make it delicious. From betterrecipes.com. Again altered even further for calorie and fat content. You might not be able to find whole wheat bread crumbs. I usually de-crust 1-2 slices of whole wheat bread and dry in the oven and then crumble. The last two ingerdients are for the topping. Easily halved or even cut into thirds.

- Mix together eggs, taco seasoning, black pepper, onion, garlic, tomato sauce, brown rice, bread crumbs and cheese.
- Add turkey and mix until thoroughly combined.
- Grease sheet pan with Pam
- Form two loaves of meat mixture on pan.
- Top each loaf with tomato sauce and cheese.
- Bake at 375 degrees for 1 1/4 hour or until meat thermometer registers 165 degrees.
- Let rest for 5 minutes before slicing.

- Preheat oven to 350°. In a large bowl, combine the first 10 ingredients. Add turkey; mix lightly but thoroughly. Shape into two 7-1/2 x 4-1/2-in. loaves. Place in a greased shallow baking pan., Bake 1 hour. Mix together topping ingredients; spread over loaves. Bake until a thermometer reads 165°, 10-15 minutes longer. Let stand 10 minutes before slicing., Freeze option: Bake meat loaves without sauce. Securely wrap and freeze cooled meat loaves in foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaves and place in a greased shallow baking pan. Prepare topping as directed; spread over meat loaves. - 1. Preheat oven to 375 Cook peppers and onions for 3 minutes over medium heat in a pan sprayed with nonstick spray. In a large bowl, combine onions and peppers with turkey, corn and seasoning mix. Spread half of the mixture evenly into the bottom of a loaf pan (about 9" x 5" sprayed with nonstick spray. Layer the two slices of fat-free cheese on top of the mixture ( try to keep slices away from the pan's edges). Evenly top with the remaining meat mixture. Poor the salsa over the top of the loaf. - 2. Heat olive oil in a medium skillet over medium heat. Add onion and sauté until tender and translucent, about 5 minutes. Stir in garlic and let cook an additional minute or two. Remove from heat and let cool completely.
