TERIYAKI TILAPIA (MY MOCK UNAGI)

I know the texture doesn't resemble that of unagi (eel), but I was craving unagi sushi and came up with this to satisfy my craving. It's great in sushi with avocado and scallions, but also great on its own.

Teriyaki Tilapia (My Mock Unagi) image

Steps:

  • In a non stick pan, over medium high heat, heat oil and then add the tilapia.
  • Mix the remaining ingredients and add them to the pan, cooking until the fish is cooked through and the sauce has thickened.

1/4 cup seasoned rice wine vinegar
1/2 cup soy sauce
1 teaspoon fresh ginger, grated
1/2 teaspoon garlic, minced

Simple Teriyaki Sauce image

Steps:

  • Combine 1 cup water, soy sauce, brown sugar, honey, ginger, and garlic powder in a saucepan over medium heat. Cook until nearly heated through, about 1 minute.
  • Mix cornstarch and 1/4 cold water together in a cup; stir until dissolved. Add to the saucepan. Cook and stir sauce until thickened, 5 to 7 minutes.

Japanese Barbecued Eel (Unagi Kaba-Yaki) image

Steps:

  • Put sake, mirin, soy sauce, sugar, and fish stock in a pot.
  • Bring to the boil, then simmer until reduced by half.
  • Skewer eel steaks so that they will remain flat during cooking.
  • Place eel skin-side down on a preheated grill; cook 3 minutes on high. Flip eel and cook another 3 minutes.
  • Baste skin-side with sauce; flip and cook 1 minute. Baste meat side with sauce; flip and cook 1 minute.
  • Repeat previous step once more.
  • Serve hot over rice.
