Steps:

  • 1. In soup pot, bring the chicken stock to a boil. Add the chicken, 1 teaspoon of salt, peppercorns, oregano, garlic and anchos. 2. Reduce to a medium simmer and cook for about 20 minutes or until the chicken is done. Remove the chicken and anchos to cool. 3. Strain and reserve the stock. 4. When the chicken and ancho chiles are cool enough to handle, dice the softened chiles, and chop and hand-pull the chicken into bite-sized pieces. 5. Heat the olive oil in a soup pot. Add the onions and remaining salt, and cook until the onions begin to turn translucent. Add the poblano chile and cook a few more minutes. 6. Add the tomatoes and the reserved stock, chicken and anchos. Bring to a boil briefly, then remove from heat. 7. Add the lime juice and grapefruit zest. Allow flavors to meld at least 5 minutes before serving. 8. Garnish with extra lime juice (throw the squeezed lime wedges into the soup), serrano chiles, tortilla chips, avocado and epazote.

2 quarts chicken stock
2 large chicken breasts (I sometimes use 6 thighs instead)
2 teaspoons salt
1 teaspoon black peppercorns
2 large sprigs of fresh oregano
½ head garlic, crushed
2 or 3 ancho chiles
2 tablespoons olive oil
½ medium onion, diced
1 green chile poblano, diced
3 roma tomatoes, roughly chopped
juice of 2 limes
zest of ½ grapefruit (shaved into bite-sized pieces)
Garnish:
lime wedges
chile serrano, thinly sliced
tortilla chips or strips
avocado, diced
epazote leaves

TEXAS THICK & SPICY TORTILLA SOUP

I came up with this after several attempts and still tweaking. Starting with a bland one I found in a cookbook and deleted and added until I got the taste and consistency I liked. Most of the ones I had tried were watery and bland. This is a hot soup. If you don't like hot and spicy, don't make it ,,, you won't like it. I'm from Texas where we like our women, chili and most everything else hot. To make it even hotter, add the whole can of Rotel and leave the Jalapeño seeds in. This will generously serve 6 people. Add garnish if you must or just pour it up and enjoy with a cool glass of iced tea or man beverage of your choice. You can use generic brands for the ingredients but if you are health conscious, check the labels for fat and cholesterol content. The generics I have looked at are usually higher in both compared to name brands.

SALBUTES, A YUCATECAN TORTILLA

Salbutes are delicious little snacks which typify Mayan and Yucatecan cooking. They can be made with a variety of toppings, I've listed the most popular ones. Salbutes can also be served as part of a luncheon menu. Before making these, note that the pickled red onions (so famous in Yucatan cooking) do require a standing time of several hours. It's best to make them a day in advance, they keep for about a week in the refrigerator. For a great casual lunch, try serving salbutes with a bowl of bean soup and a fresh fruit salad. It's a popular combination served at the Mayan Beach Garden in Yucatan where this recipe comes from.

Steps:

  • For the Masa:.
  • Mix the first four ingredients until they are well blended.
  • Divide the dough into 12 equal size balls and press them lightly in a wax paper lined tortilla press.
  • They should be smaller and thicker than regular tortillas, about 1/8" thick and 2 1/2 " in diameter.
  • In a deep skillet, fry them on both sides in hot oil, they will inflate as they cook.
  • Remove each one as it inflates and drain well on paper towels.
  • For the Pickled Red Onions:.
  • Place onions in a sauce pan, add water to cover, bring to a boil and remove from the heat.
  • Drain and rinse in cold water to stop the cooking process.
  • Place the onions in a glass container with lime juice, dried oregano and salt and pepper.
  • Allow to sit for several hours before serving, they keep for one week refrigerated.
  • Assemble Salbutes:.
  • Mix 1 tablespoon of lime juice with cabbage, salt and peppr to taste.
  • Top each salbute with a layer of cabbage, then pickled red onion, then slices of avocado, and top with a tomato slice.
  • Serve immediately.

  • Briefly toast the chiles by using tongs to carefully holding each chile an inch over a gas flame, turning for a few seconds until the chile is blistered and fragrant. (Or alternately, if you have an electric stove, you can heat a skillet over medium-high heat and press the chiles down onto the hot skillet on each side for a few seconds until blistered and fragrant.) Transfer the chiles to a blender or food processor and set aside.
  • Heat the olive oil in a large stockpot over medium-high heat. Add the onion and sauté for 5 minutes until softened, stirring occasionally. Add the garlic and sauté for 1-2 minutes more until fragrant, stirring frequently. Using a slotted spoon, transfer the mixture to the blender along with the chiles.
  • Add the tomatoes to the blender, along with 1 cup or so of the stock (enough to help the mixture purée easily). Then purée until completely smooth and no large chile flakes remain.
  • Transfer the blended broth mixture to the stockpot, add the remaining stock, oregano and epazote sprig (if using). Cook over medium-high heat until the broth reaches a simmer. Then reduce heat to medium-low to maintain the simmer and cook, uncovered, for 10 minutes.
