ROADKILL

This dip recipe is pretty common, but the name is pretty quirky, and I thought it was worth sharing. One of my professors in college used to make this for almost every gathering. Everyone loved it (well, almost everyone, but everyone's taste buds are different). After I graduated, I asked him for the recipe to use for a potluck at work, and I asked him about the name. It seems that for one gathering (Halloween, I think), they had to come up with a name for each dish. This one was dubbed "Roadkill." So here it is (actual roadkill not required):

Steps:

  • Brown beef and onion together, seasoning with garlic salt, then drain.
  • While beef is cooking, cut Velveeta up into small cubes.
  • Put Velveeta, beef, and Rotel into a crockpot and cook on high until Velveeta is melted, stirring occasionally.
  • Turn to low to keep warm.
  • Serve with tortilla chips.

1 lb ground beef (I use extra lean)
1/4 cup diced onion
1 (10 ounce) can rotel, drained
1 (2 lb) package Velveeta cheese, cubed (I use the light)
garlic salt, to taste

Steps:

  • clean and cut meat
  • marinate in beer, bay, worcestershire sauce overnight.
  • cut onion,bell pepper, zuchinni.
  • in a saucepan combine oil, honey, jalepenos, worcestershire, spices and herb.
  • bring to a soft boil and simmer sauce.
  • drain meat.
  • heat grill.
  • skewer meat vegatables.
  • drain sauce cool.
  • paint skewered meat and veggies with sauce.
  • cook on open grill until meat is done.
  • continue painting with sauce while cooking.
  • serve hot.

3 lbs meat, cuut into 2x1x1 pieces
12 ounces beer
1 bay leaf
1 ounce Worcestershire sauce
1 large onion, cut into large pieces
2 bell peppers, cut into large pieces
1 zucchini, into slices
1 teaspoon mustard powder
1 teaspoon cayenne powder
2 teaspoons dried chipotle powder
1 teaspoon thyme
1 teaspoon garlic powder
1 teaspoon onion powder
8 chopped jalapenos or 8 serranos
2 cups peanut oil
4 ounces honey
1 ounce Worcestershire sauce

  • In a large bowl, gently combine the ground beef, egg, Lawry’s seasoning, salt, and pepper. Be careful not to over-work the beef. Shape it into hamburger patties. Press your thumb into the center of each patty to form a depression. Chill for 10 minutes.
  • Meanwhile, cook the mushrooms and onions over medium heat until the onions are translucent, about 5 minutes. Remove them from the heat.
  • Cook the burger patties in a pan over heat on each side until browned, about 2 minutes. (They don't need to be cooked through since they will cook further in the oven.)
