THAI RED CURRY NOODLES WITH VEGETABLES
Think of this dish as red curry noodles, version 2.0. By doctoring up jarred red curry paste with fresh chile, garlic, ginger, lemongrass and spices, this dish gets a much more complex, intense flavor than the usual version. Once you have all the ingredients at the ready, the dish comes together quickly. And you'll have enough leftover curry paste to make this again, even faster the next time. Omit the fish sauce (use soy instead) and egg to make this a vegan dish.

- Prepare the curry paste: In a blender or mini food processor, combine cilantro, garlic, shallot, chile, red curry, coconut oil, ginger, lemongrass, zest and juice of 1 lime, fish sauce, curry powder, cumin and coriander. Blend into a paste, scraping down the sides of the blender as needed. If mixture is too thick to blend, add teaspoon or two of water as needed.
- In a large skillet, heat coconut oil over medium heat. Stir in mushrooms, half the scallions, garlic, chile and a large pinch of salt. Sauté until golden, 10 to 12 minutes.
- Meanwhile, cook the noodles according to package directions. Drain and set aside.
- Stir 1/4 cup curry paste mixture into skillet and cook until fragrant and darkened, 1 to 2 minutes. Stir coconut milk into skillet along with remaining 1 1/2 tablespoons fish sauce, and juice of 1/2 lime.
- Add red pepper, snow peas and 1/2 teaspoon salt. Cover and cook, stirring occasionally, until vegetables are softened, 3 to 5 minutes. Stir in bok choy and cook until wilted, 2 to 4 minutes longer.
- Fold in noodles, tossing until coated with sauce and heated through. Add fish sauce or lime juice to taste, and pass lime wedges at the table. Top with remaining scallions and any of the optional garnishes. Serve with lime wedges on the side. Store the extra curry paste in the refrigerator for up to 3 weeks, or freeze for up to 3 months.
CHIANG MAI CURRIED NOODLES (KHAO SOI GAI)

- First, make the pickled chilli & shallots: Put the chilli and shallots in a small bowl and pour the vinegar over. Add some salt and let it sit to pickle while you make the curry.
- In a large saucepan, heat the 1 tbsp vegetable oil. Add the curry paste and turn the heat down to medium. Cook for 5 mins, then add the curry powder and chilli flakes. Cook for 1 min more, then add the coconut milk, coconut cream, stock, fish sauce and lime juice. Bring to a simmer.
- Chop the chicken into pieces and add to the curry. Cook for 15 mins or until tender.
- Boil some water in a large saucepan for the noodles. Meanwhile, heat the vegetable oil in a small wok - it's ready when a small piece of bread sizzles when dropped in. Add 75g of the noodles to the wok in 4 batches until they bubble up and go crispy. Use a wire mesh ladle or slotted spoon to remove them and drain on kitchen paper.
- Boil the remaining noodles for 2-3 mins until al dente, then drain. Divide the noodles between 4 bowls. Pour the curry over each and top with coriander, beansprouts, some drained pickled chilli & shallots, spring onions and a drizzle of chilli oil. Top with the crisp noodles and devour while it's hot.

THAI CURRIED NOODLE - GUEYTEOW KAK
This recipe starts off with beef cubes but you can use any leftover meat you may have too such as roast beef, grilled chicken, roast chicken, leftover pork etc for ease of preparation. In my recipe photo I used leftover roast beef. You can use less red curry paste if you do not care for too hot of soup. The recipe calls for 2 tsp red curry paste, but you can use only 1 tsp. If you cannot find rice flour noodle easily, you can substitute udon type noodles too. Right before serving I like to throw in sliced greens such as mizuna, lettuce, etc for texture and taste.

- If using raw beef, put beef in a small pan and cover with water and bring to a boil. Simmer gently for 10 minutes and set aside. If using leftover meat, skip this part.
- Soak rice flour noodle for 20 minutes in water and drain. Boil water in a pot. Put the noodles in a sieve or strainer and dip them into the boiling water for 2 to 3 seconds only and drain. Divide into two serving bowls.
- Cut the eggs into quarters and set aside.
- In a small frying pan heat 1 T of oil and fry the sliced tofu until slightly browned. Drain and set aside.
- Add 1 T oil in the same frying pan fry the shallot or red onion until dark golden brown and crisp. Set aside.
- In the same frying pan, add 2 T of oil and add garlic and fry until lightly brown. Stir in the curry paste, coconut milk, curry powder, fish sauce sugar, tofu, and beef cubes or any other leftover meat you may want to use. Stir and simmer gently for about 5 minutes.
- Divide the soup between two bowls over the noodle. Arrange quartered eggs evenly and top with reserved fried shallots or red onion, roasted and crushed peanuts, lime wedge and sprinkle of cilantro for garnish.
