THANKSGIVING CRANBERRY CREAM CHEESE SALAD

Perfectly sweet, perfectly tangy, this cranberry cream cheese salad is perfect for Thanksgiving. The filling has sweet grated apples and tart cranberries that are all held together with cherry Jell-O - it's a delicious combination. But, the Jell-o layer does not have a typical Jell-O texture. The cream cheese topping is sweet...

Thanksgiving Cranberry Cream Cheese Salad image

Steps:

1. Part 1. Dissolve Jell-Oin boiling water. Stir to mix and set aside to cool.
2. Add apples, pecans, and cranberry sauce.
3. Turn into a 13x9 glass dish and chill until firm.
4. Part 2. Blend softened cream cheese with powdered sugar until smooth.
5. Add vanilla to the Cool Whip and mix with a wooden spoon. Add to the cream cheese mixture along with the pineapple.
6. Fold the mixture together.
7. Spread evenly over firm set Jell-O mixture. Sprinkle toasted pecans on top.
8. Keep chilled until serving time.

Ingredients

1 pkg cherry Jell-O (6 oz)
2 c boiling water
2 large Golden Delicious apples, peeled and grated
1 c chopped pecans
1 can(s) whole cranberry sauce (14 oz)
TOPPING
1 pkg cream cheese, at room temperature 2 hours (8 oz)
1/2 c powdered sugar
1 tsp vanilla extract
1 can(s) crushed pineapple, drained (20 oz) well
6 - 8 oz frozen whipped topping, thawed
1/2 c chopped toasted pecans

CRANBERRY CREAM CHEESE DIP

I got this from a neighbor while living in Germany and modified it a little. She was an American too. This was always a hit at every get-together we had! Fresh cranberries with jalapenos, sugar, green onions, and cilantro makes for great salsa. Add the cream cheese and you have a great dip! Serve with Ritz® crackers or Wheat Thins®.

Steps:

Chop cranberries in a food processor or by hand. Transfer to a bowl.
Add sugar, green onion, cilantro, jalapeno pepper, lemon juice, cumin, and salt to cranberries; mix well. Cover and store in the refrigerator until cranberries have lost some of their bitter taste, about 4 hours.
Place cream cheese bricks on a plate and pour cranberry mixture over top. Serve immediately.

Steps:

Process cranberries in blender or food processor; pour sugar over cranberries and stir to dissolve.
Bring 3/4 cup of water to a boil; stir in gelatin and let cool. Stir cooled gelatin into cranberries, and add pineapple, orange juice, apple and pecans. Mix well, cover and refrigerate overnight.
Whip cream and beat in cream cheese.
In a glass serving dish, layer half of the cranberry mixture, then the whipped cream mixture, then the remaining cranberry mixture.

Pulse cranberries in a food processor until finely chopped with some coarse pieces remaining, about 6 to 8 pulses. Transfer to a large bowl, and stir in sugar and marshmallows. Cover and chill 4 hours or up to overnight.
Beat cream cheese with a stand mixer fitted with paddle attachment on medium speed until creamy and free of lumps, about 1 to 2 minutes, stopping to scrape down sides as needed. Add 1 cup heavy cream, and continue beating until mixture starts to thicken, about 2 minutes. Add remaining 1 cup cream, and continue beating until soft peaks form, about 2 minutes.
Fold cream mixture into cranberry mixture, and stir in salt, pecans, and grapes. Serve immediately, or cover and chill up to 3 days.
