CHOCOLATE FONDUE

I adopted this recipe after Mean Chef (IHHDRO) left the site. His original comments were, "A simple party dessert which is a year-round opportunity to use the season's best and ripest fruit." My comments submitted as a review when I first tried it were, "Excellent chocolate fondue. I cut the recipe in half and prepared it with Ghirardelli Semi-sweet chocolate and heavy cream. Hubby and I ate an entire pound of strawberries dipped in this luxury while watching movies tonight." I have made this many times since for just Hubby and I, and for guests. It is a very good chocolate fondue.

Steps:

  • To make the sauce, in a small bowl, combine the chocolate and 1/2 cup milk or cream and melt gently in a barely simmering water bath or microwave on Medium (50 percent) power for about 2 minutes.
  • Stir until smooth.
  • Add more liquid if the sauce seems too thick or look curdled.
  • Remove from the heat and stir in the vanilla.
  • Use warm fondue immediately or set aside until needed and rewarm briefly.
  • Have forks, skewers, or pretty (or goofy) swizzle sticks available for guests to dip with.
  • If the fondue gets too thick or cool, reheat gently (without boiling) for 1 minute in the microwave on Medium (50percent) power or set in a pan of barely simmering water.
  • Leftover sauce keeps several days in the refrigerator.
  • It is a prefect topping for ice cream.
  • Note: This is a versatile recipe that can be tailored to your taste and the type of chocolate you are using.
  • For the most intense chocolate fondue, use milk, rather than half-and-half or cream, and omit the butter.
  • For even greater intensity, choose a bittersweet chocolate labeled anywhere from 66 percent to 70 percent and use the greater amount of liquid called for.
  • Butter or cream results in a softer, mellower chocolate flavor.
  • Ideas for dipping: Kumquats or segments of seedless clementines, oranges, or ruby grapefruit- If possible, separate the citrus into segments without breaking the membrane.
  • If you set the segments on a rack to dry in a warm place or in the oven, preheated to 200° F, then turned off for several hours, the membrane will dry like crisp paper and the juices will burst in your mouth when you take a bite.
  • Chunks of pineapple Chunks of fresh coconut or large curls of dried coconut Chunks of banana Dried fruit such as apricot, mango, papaya, pineapple, or Bing cherries Strips of good-quality candied orange, grapefruit or lemon peel Cubes of pound cake or angel food cake, or toasted cubes of brioche or challah Cigarette cookies, fan wafers, graham crackers or digestive biscuits, or pretzels Marshmallows or meringues Toasted shaved almonds (to sprinkle on after dipping).

10 ounces bittersweet chocolate or 10 ounces semisweet chocolate, chopped into small pieces
1/2-3/4 cup half-and-half (or 1/2 to 3/4 cup milk plus 2 tablespoons unsalted butter) or 1/2-3/4 cup heavy cream (or 1/2 to 3/4 cup milk plus 2 tablespoons unsalted butter)
1/2 teaspoon vanilla extract

My family is very well liking the cinnamon bears dipped in Chocolate you dont have to get the fancy chocolate like they say I have used regular baking coco and also the chocolate bars my son is going on 12 and he love it when i say we going to make chocolate stuff tonight he loves to help and not much to it you can use a regular sauce pan brake of a little bit of choclate or you can add the coco with a little milk or water and dip your favorite things in it and put on wax paper tell it drys we have done bananas and cinnamon bears even did sweetish fish so try it let me know if you like it.

  • First you need to get a sauce pan out or a fando pan if you have one put it on the stove put the wax paper on your table or were your going to be transfering the stuff you are dipping in the chocolate.
  • Now your going to want to start getting your chocolate ready to start melting can take as long as 20mins for chocolate to melt depends on the chocolate you are using and be creative is the fun part cause you can think of many things to dip in chocolate my family we went from dipping bannana to strawberries to cinnamon bears to last the sweetish fish candy .
  • make sure you cove the suff real good with chocolate so it gets all over what your making it is fun to do and very fun I will try to get some pictures the next time my family does this my son loves to do it and some times he will come ask me mom can we do the chocolate covering tonight its so fun how he says it but kids are always good to do this specially if they get to be the one to be messy just be careful to not let the little ones get burnt the thing about this I like is its not hard to clean up after wards as far as how long it takes is up to the person or people you have helping make the fondo and what all you are wanting to cover in chocolate me and son we spend maybe 30 mins to a 1hr. we have also got in the habit the last ones we did we sprinkled the cake sprinkles over the chocolate bears and stuff we made and even took to our neighbors so its a good fun and entertaining project.

  • Make chocolate bark. One of the easiest chocolate desserts you can make is chocolate bark. If you haven't tried chocolate bark before, all it requires is melting a block of chocolate, pouring on a baking tray and adding on your favourite dry ingredients.
  • Bake choc chip cookies. You don't need chocolate chips to make killer choc chip cookies. Instead, chop your block of chocolate into small pieces and add to your favourite cookie recipe.
  • Make hot chocolate. You guessed it, you can make the fanciest, richest, most decadent hot chocolate with that block in your cupboard. Simply break off some chocolate pieces, melt using a double boiler, and add it to your milky base.
  • Melt chocolate and swirl through ice cream. If you've got a block of chocolate at home waiting to be eaten, as well as a tub of vanilla ice cream, you need to try chocolate swirl ice cream.
  • Grate chocolate and add to yoghurt. For a super simple and health(ier) treat, grab some dark chocolate and finely grate (using a grater or microplane) or shave it (using a knife or peeler) on top of Greek yoghurt.
  • Make chocolate ice cream. For serious ice cream lovers and chocoholics, make your own rich, indulgent chocolate ice cream at home. To add texture and flavour, stir through nuts, biscuit pieces, caramel or more chocolate pieces.
