ALMOND CHOCOLATE PUDDING CAKE
I have not tried this recipe myself, but got it from a friend that has impeccable taste in desserts, so I am sure it's yummy!

Steps:
- Position rack in center of oven and preheat to 350 degrees.
- Coat an 8x8 baking pan with cooking spray.
- In a large bowl, combine 2/3 cups of the sugar, all the flour, salt, and baking powder.
- Stir well to blend.
- Whisk in the oil, milk, and both extracts.
- Batter will be stiff.
- Scrape batter into oiled pan and smooth on top.
- In a small bowl, stir together the cocoa and remaining 2/3 cup sugar.
- Sprinkle this over the batter.
- Pour the boiling water over the batter, do not stir!
- Bake 25 to 35 minutes, or until top of cake looks crisp and crackled.
- Cool on a wire rack for 5 minutes.
- Serve warm.
TRIPLE CHOCOLATE PUDDING BROWNIES
I took my usual brownie recipe and jazzed it up with a box of pudding!! So feel free to try this without the pudding, or even try a variety of puddings to change things up more!

Steps:
- Cook sugar, butter and cocoa on medium heat till butter melts.
- Remove from heat, add eggs and vanilla.
- Add remaining ingredients.
- Put in a greased 9x13 pan and sprinkle the M&M's on top.
- Let stand for 10 minutes before baking! (this give it the glossy brownie crust when they are finished).
- Cook at 350 for 25 minutes.

Steps:
- Preheat oven to 350°F.
- Combine flour, sugar, 1/4 cup cocoa, baking powder and salt in an 8 inch square baking pan and stir with a fork to combine. Mix in milk and oil until batter is uniform.
- Sprinkle brown sugar, 1/4 cup cocoa and chocolate chips evenly over batter. Add vanilla to the hot water and pour over everything. Do not mix.
- Place pan in oven and bake for 30-35 minutes, until surface of the cake looks dry. The pudding will be bubbling around the edges. Allow to cool for a few minutes before serving.
- Leftovers, if you have them, may be stored for one day at room temperature. Reheat before serving.

- Heat oven to 350°F (325°F for dark or nonstick pan). Grease and lightly flour bottom only of 13x9-inch pan.
- In small microwavable bowl, microwave condensed milk and 1/2 cup of the chocolate chips uncovered on Medium (50%) about 1 minute or until chocolate is softened; stir until smooth, and set aside.
- In large bowl, beat dry cake mix and oil with electric mixer on low speed about 15 seconds or until crumbly; reserve 3/4 cup. Add applesauce and eggs to remaining mixture; beat on low speed 30 seconds, scraping bowl occasionally (batter will be thick and grainy). Beat on medium speed 2 minutes, scraping bowl occasionally. Spread batter in pan.
- Drop melted chocolate mixture by teaspoonfuls over batter, dropping more around edge than in center. Stir remaining 1/2 cup chocolate chips and the pecans into reserved cake mixture; crumble over batter.
- Bake 37 to 43 minutes or until center is set. Run knife around sides of pan to loosen cake. Cool completely, about 2 hours. Store covered.
