THICK TURKEY BEAN CHILI

"When our daughters wouldn't eat the spicy chili beans I prepared, I came up with this milder, slightly sweet version," notes Keri Scofield Lawson of Fullerton, California. "They love eating the hearty chili as a dip with tortilla chips. I never have leftovers."

Thick Turkey Bean Chili image

Steps:

  • In a large saucepan, brown the turkey until meat is no longer pink; drain. Stir in the beans, sloppy joe sauce, tomatoes, brown sugar and seasonings. Simmer, uncovered, for 30 minutes or until heated through. Serve with cheese, sour cream and tortilla chips if desired.

Steps:

  • Mix ground turkey, tomatoes, kidney beans, pinto beans, chicken stock, onion, hot sauce, chili powder, salt, minced garlic, paprika, oregano, cayenne pepper, cumin, and black pepper together in a slow cooker; stir to break the turkey into small chunks.
  • Cook on Low 6 to 8 hours (or High for 4 hours).

Thick Ground Turkey Chili image

Steps:

  • Chop all vegetables into small pieces.
  • In a large soup style pot saute all the vegetables in olive oil until soft. 15 minutes.
  • Add ground turkey to sauteed vegetable and stir until well cooked.
  • Stir in all seasonings; cumin, oregano, paprika, chili powder, black pepper, celery salt, kosher salt. Mix well to incorporate all the seasonings.
  • Dump in tomato paste, Rotel tomatoes, and pinto beans.
  • Mix all ingredients well.
  • Reduce your heat to low and let simmer for 1 hour to meld all the flavors and thicken the chili. Stir often. Be sure to taste the mixture to see if it needs more salt, pepper or chili powder to your liking.
  • Put chili into large bowls and garnish with shredded cheddar cheese (Tillamook), finely chopped jalapeno and fresh onion.
  • Pair the chili with a local pale ale beer.

Steps:

  • First ground turkey, I add the onion and the yellow pepper to it, you can season it with crushed red pepper if you like it spicy, this cuts stew time.
  • While turkey is browning, I put the tomatoes, beans, and seasoning in another pot. Make sure it's large enough to fit everything in! Put on medium to low heat.
  • When turkey is finished I add that to the tomato/bean mixture and let it get nice and toasty. Should stew for about ~20 minutes.
  • Top with cheese and sour cream.
