Steps:

  • Heat the olive oil in a large saucepan over medium heat. Add the garlic and cook, stirring frequently, until it just turns golden, 3 to 4 minutes. Add the tomatoes, Italian seasoning, basil, 1 teaspoon salt and a few grinds of fresh pepper. Bring to a simmer and cook, stirring occasionally, for 7 minutes. Take off the heat and stir in the butter until melted. Add salt and pepper to taste.

1/3 cup olive oil
6 cloves garlic, minced
Three 26-ounce cartons chopped tomatoes
1 teaspoon Italian seasoning
1 large basil sprig
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter

CLASSIC MARINARA SAUCE

Homemade marinara is almost as fast and tastes immeasurably better than even the best supermarket sauce - and it's made with basic pantry ingredients. All the tricks to a bright red, lively-tasting sauce, made just as it is in the south of Italy (no butter, no onions) are in this recipe. Use a skillet instead of the usual saucepan: the water evaporates quickly, so the tomatoes are just cooked through as the sauce becomes thick. (Our colleagues over at Wirecutter have spent a lot of time testing skillets to find the best on the market. If you're looking to purchase one, check out their skillet guide.)

Steps:

  • Pour tomatoes into a large bowl and crush with your hands. Pour 1 cup water into can and slosh it around to get tomato juices. Reserve.
  • In a large skillet (do not use a deep pot) over medium heat, heat the oil. When it is hot, add garlic.
  • As soon as garlic is sizzling (do not let it brown), add the tomatoes, then the reserved tomato water. Add whole chile or red pepper flakes, oregano (if using) and salt. Stir.
  • Place basil sprig, including stem, on the surface (like a flower). Let it wilt, then submerge in sauce. Simmer sauce until thickened and oil on surface is a deep orange, about 15 minutes. (If using oregano, taste sauce after 10 minutes of simmering, adding more salt and oregano as needed.) Discard basil and chile (if using).

Steps:

  • Heat the olive oil in a large (12-inch) skillet. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Cover, and simmer on the lowest heat for 15 minutes.

1 tablespoon good olive oil
1 cup chopped yellow onion (1 onion)
1 1/2 teaspoons minced garlic
1/2 cup good red wine, such as Chianti
1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
1 tablespoon chopped fresh flat-leaf parsley
1 1/2 teaspoons kosher salt

  • 1. Cut tomatoes in half on their equator, gently squeeze out the seeds, and use the fine side of a box grater to grate seeded tomatoes into a bowl, leaving the skin behind.
  • 3. Once you start to see faint wisps of smoke, carefully add the gnocchi to the pan and give them a gentle shake to prevent them from sticking. Allow the gnocchi to lightly caramelize. Use the sloped edge of the sauté pan to make the gnocchi “jump,” which will help them caramelize evenly. Season with salt.
  • 4. Remove the pan from heat and grate in the garlic. Take the pan back to the heat to lightly sauté the garlic.

  • 1. __Make the beurre manié__. Mix together equal parts butter and flour until thoroughly incorporated and smooth. Set aside.
  • 2. __Make the sauce velouté__. Bring the stock to a simmer over medium-high heat. Lower the heat to medium and whisk in enough of the beurre manié (about half) to thicken the sauce. Be sure to keep whisking as you incorporate the thickener into the stock to help achieve a velvety texture. As the mixture begins to combine with the stock, the color will darken slightly. Offset the pot from the flame to allow any impurities from the flour to be driven to one side. Using a ladle, skim off any impurities that rise to the top. Use a spoon to check the texture of the velouté as it comes together—the desired consistency is reached when a clean line is left behind when you run your finger through the sauce on the back of a spoon. Continue whisking while seasoning to ta
  • 3. __Make the sauce suprême__. Warm the velouté sauce in a saucepot set over medium heat, whisking occasionally for even heating. When the sauce reaches a small simmer, lower the heat. Whisk in the cream and crème fraîche. Season with salt.
