SHORT RIB GNOCCHI

Short Rib Gnocchi image

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat 2 tablespoons oil in a large Dutch oven over medium heat. Sprinkle the short ribs all over with 1 teaspoon salt. Brown the short ribs all over, in batches if needed, removing to a plate as they brown, 4 to 5 minutes.
  • When all of the ribs are out, add the carrot, celery and onion. Cook, stirring occasionally, until slightly softened, 3 to 4 minutes. Make a spot in the center of the pot and add the tomato paste, rosemary, thyme, red pepper flakes and three-quarters of the garlic. Let sizzle for a minute or so, then stir into the vegetables. Add the wine and bring to a boil, then cook until reduced by half, 1 to 2 minutes. Add the bay leaves and 3 cups stock. Return to a simmer and add the short ribs in one layer. Cover and bake, stirring halfway through and adding more stock to keep the ribs almost covered, until the short ribs are very tender and falling from the bone, 1 1/2 to 2 hours. Remove the short ribs from the oven. Use 2 forks to shred the meat, discarding the bones and cartilage.
  • For the crispy panko topping, heat the remaining tablespoon olive oil in a small skillet over medium heat. Add the remaining garlic and cook until sizzling. Add the panko. Cook and stir until the crumbs are coated with the oil. Continue to cook and toss until the crumbs are crisp and golden, about 3 minutes. Remove from the heat, then stir in 2 tablespoons parsley and season with salt. Set aside.
  • Bring a large pot of salted water to boil for the Gnocchi. Return the sauce in the Dutch oven to a simmer. Add the Gnocchi to the boiling water and boil until they float. Simmer until cooked through, 2 to 3 minutes from the time they begin to float. Remove with a large spider to the simmering sauce. Sprinkle with the remaining 2 tablespoons parsley and toss to coat the Gnocchi in the sauce, adding a little of the Gnocchi cooking water if the sauce seems too dry. Serve in pasta bowls, sprinkled with the crispy panko topping.
  • Dust a baking sheet with flour and set aside. Put the whole, unpeeled potatoes in a pot and cover with cold water by about an inch. Bring to a simmer and cook until tender when pierced with a knife, 15 to 20 minutes. Drain and let cool just enough that you can peel them. (They should still be quite warm.) Use a ricer or food mill to rice the potatoes right onto your work surface in a thin layer. Let cool completely.
  • Sprinkle the salt and some pepper over the cooled potatoes. Drizzle the beaten egg over the potatoes and sprinkle the flour over the egg. Flour your hands and knead the dough until it comes together in a loose clump. Knead just until the dough comes together in a cohesive mass (don't overwork it)-the dough should be a tight ball, not crumbly, but not too moist. You know the dough is right if you cut it in half and it's the texture of chocolate chip cookie dough (without the chips!).
  • Cut the dough into quarters, keeping the others covered as you work. Roll a piece of dough into a long snake about 3/4-inch thick and cut crosswise into 3/4-inch-thick pieces. Dust the pieces well with flour. Hold a fork in your non-dominant hand. Rest a piece of dough at the top of the tines of the fork and roll down with the thumb of your other hand, making a little concave depression in the gnocchi to catch sauce. Repeat with the remaining dough. Transfer the floured gnocchi to the prepared baking sheet. (Gnocchi can also be frozen right on the baking sheet-once they are solid, transfer to a zip-top bag for longer storage. Add a minute or two to the cooking time if cooking from frozen.)

3 tablespoons extra-virgin olive oil
2 1/2 pounds bone-in English-cut short ribs, cut into 3-inch lengths
Kosher salt
1 large carrot, chopped
2 stalks celery, chopped
1 large onion, chopped
1/3 cup tomato paste
1 teaspoon chopped fresh rosemary
1 teaspoon fresh thyme
Pinch crushed red pepper flakes
4 cloves garlic, finely chopped
1 cup red wine
2 bay leaves
3 to 4 cups low-sodium chicken stock
1/2 cup panko
1/4 cup chopped fresh Italian parsley
Gnocchi, recipe follows
1 1/2 cup all-purpose flour, plus more for dusting
2 large russet potatoes (1 1/2 pounds)
1 teaspoon kosher salt, plus more for cooking the gnocchi
Freshly ground black pepper
1 large egg, beaten

PACZKI, OUR MALE SCHNOODLE

Well, this is our little puppy that we got most recently from Windy Hill Kennel. The same place we purchased Tibby. His name Paczki is pronounced (poonchkey or punchkey) and has another meaning which is the name for a wonderful Polish donut that is made especially right before lent. He is now 6 months old and very active. He loves playing with his Sissy (Tibby) and unlike her, he is very loud and boisterous! His bark echos in the house and he barks for attention not to guard the house. LOL He is growing very fast and is now taller than his sister. We are very happy that we got a second dog for Tibby as they love & play very well together. He too loves his BilJac food and pickles when Mommy has her snack. He is not very graceful and is quite floppy and awkward in his actions. He is cautious and spooked easily but other than that he is a little snuggler too and we love him so.

Paczki, Our Male Schnoodle image

  • Paczki when he was first born April 20, 2011
  • Paczki's first bath at home. He looks a little bewildered. hehe
  • This is one thing Paczki loves to do best is speak his mind and he is very loud doing it. LOL
  • Paczki right after his first official hair cut. We have a wonderful friend and groomer who comes right to our house to give our Schnoodles their special "doo's". hehe
  • Paczki's favorite thing to do; playing with his Sissy (Tibby).
  • Most recent pic of Paczki just this week and he is now officially taller than his sister at a little over 6 months old.
  • Paczki's first contest on Facebook with a company called "D Is For Dog" and is going on right now for best Halloween costume. He is the "Count Paczki" and I hope that he wins.

  • Paczki's first official Dog Show was yesterday on 6/24/12 and he placed in two competitions. His sister Tibby & Paczki placed 1st in "Best Pair" and got a trophy and then Paczki won 3rd place in his catergory of best dog in a weight of 13 - 25 pds. Way to go Paczki!!!

MARMALADE, THE ORANGE LUVIN' SQUIRREL!

Luvin' Me Some Orange "Orange Lovers" I do hope you enjoy this cute recipe. Talk about savoring every bite?! LOL I was trying to think of things for the group in Town Square called "The Power of Orange" and I remembered I had these pictures and it clicked in my mind that it would be great to add him to the group. He could be the Mascot or we could just do it for fun trying to find him a name. What do you think? Any suggestions?? This is an example of "The Power of Orange" as you see him sucking on his orange. Marmalade, The Orange Luvin' Squirrel! image

  • It just clicked in my mind that I had these wonderful pics of a squirrel in our backyard eating him some oranges. I just loved that I was able to zoom in.
  • He most certainly relished every bite he took.
  • Now, I want you to know that it is two different neighbors around us who diligently feed the squirrels. We do occasionally put out some peanuts for them but otherwise Tibby our female Schnoodle would be highly offended if we feed the squirrels. In her mind, it is her job to chase them off the property. lol
  • He most certainly was intent on eating every last bit of that orange.

TIBBY, OUR FEMALE SCHNOODLE

Well this is Tibby's introduction to Just a Pinch Recipe Club. She is our almost 3 yr old blue merle Schnoodle. We love her so very much and are thankful to have her in our lives. She is so incredibly loving and is truly a "lapdog". She is a little protector and loves looking out the front window to see what is going on. Then, she will run to the back of the house to look out the patio window to make sure their is no squirrels or birds in our yard. She is also known as "Miss Frenchy" cause she loves to give kisses and rarely does anyone escape her ability to plant a big kiss on them! hehe She actually won a trophy at a dog show for being the best kisser because she kisses and hugs (she rubs her face on your face in addition to kissing). Well, here is a few picks of our precious little girl.

Tibby, Our Female Schnoodle image

  • This is Tibby the day she was born on 11-18-08. What a tiny little puppy she was.
  • Tibby is now almost 3 yrs old and is our Blue Merle Schnoodle that is a very loving and spoiled lap dog. She loves to snuggle with her family and her new little brother Paczki. This is a professional picture that was taken last fall.
  • She also loves the winter and playing in the snow. When the snow gets high enough in the backyard I shovel a circular path with cut paths in it as well. She will then run the path as fast as she can around and around and through the cut throughs too. It is so funny!!! I will try and take a better pic this winter of her in the snow path fun.
  • Tibby loves Christmas time and getting to open her own presents. This is last Christmas and she was so excited she tore into her gifts quickly.
  • Tibby is also a part time counselor and is all ears. She is an excellent listener and most certainly will bring relief to those who need it. :-)
  • This is Tibby dressed for Halloween this year 2011 as the Big Bad Wolf. "Grandma, what big ears you have!" ~~~Little Red Riding Hood. Some said she also looked liked Minnie Pearl too. hehe
  • Tibby and her new brother Paczki who is now 6 months old. This is their first week together and Tibby bonded very quickly and considered him her little buddy.
