Steps:

  • Preheat the oven to 375 degrees F.
  • Cut each pita in half and then each half in triangles and place them in a single layer on a sheet pan. Drizzle with olive oil and sprinkle generously with salt.
  • Bake for 10 minutes.

1 bag pita bread
Good olive oil
Kosher salt

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut each pita bread in quarters and each quarter in half to make 8 triangles. Place them in a single layer on a sheet pan and sprinkle lightly with olive oil, salt and pepper. Bake for about 10 minutes, until crisp, turning once.

1 package pita bread
Olive Oil
Kosher salt and freshly ground black pepper

CINNAMON TOASTED FRUIT PITA

This is a light and delicious breakfast option. We loved how the cinnamon and sugar mixture makes the pita sweet and crunchy. It's a great compliment to the creamy yogurt and fruit mixture. There is a great combination of fruits stuffed inside. Toasted almonds are a great topping and add that last bit of crunch. A simple but yummy idea!

Cinnamon Toasted Fruit Pita image

Steps:

  • Heat a cast iron griddle or any skillet over medium-low heat.
  • If you don't already have a cinnamon & sugar mixture, then mix the two together in a small dish.
  • Butter/oil both sides of the 4 pitas. Sprinkle each side with 1/4 tsp of the cinnamon mixture.
  • Place all 4 pitas on pre-heated griddle/skillet. Cook until nicely browned, about 3-5 mins.
  • Then flip to the other side and repeat.
  • While pitas are browning/toasting, clean and slice all the fruits.
  • Add to a bowl, mix until well combined.
  • Let the pitas cool and then spread 1-2 tablespoons of the Greek yogurt inside the pita.
  • Fill with fruit.
  • Sprinkle the toasted almonds. Enjoy.
  • TIP: If you need to toast your sliced almonds, put them on a small pan and put them in a pre-heated oven or toaster oven for about 4-5 minutes, until lightly browned.

Add the onion, and cook and stir until lightly browned, about 5 minutes. Add the Greek seasoning, toasted pita bread and broth; stir until the bread is uniformly moistened. Stir in the bruschetta spread, olives, lemon juice, salt and pepper to taste, and parsley. Heat through. Keep warm or reheat immediately before serving.

  • Pop the pitta into the toaster for 30 secs- 1 min, until just puffed but not crisp. Meanwhile, mix together the cheeses.
  • Slice an opening at one end of the pitta and use a teaspoon or a knife to spread the cheese mixture in. Push in some of your favourite fillings, gently squash the pitta closed between your hands, then put back in the toaster - cut-side up. Toast for 1-2 mins until golden and crisp.

  • Preheat oven to 375° F.
  • Halve pitas horizontally to form 8 rounds and lightly brush rough sides with oil. Season pitas with salt and cut each round into 6 wedges.
  • Arrange wedges in one layer on 2 baking sheets and bake in upper and lower thirds of oven, switching position of sheets halfway through baking, 10 to 15 minutes, or until golden and crisp. Cool toasts. Toasts may be made 1 day ahead and kept in an airtight container at room temperature.
