Steps:
- Bring a large pot of water to a boil. Cook the rigatoni according to the package instructions; drain and set aside to cool.
- Saute the onions in the olive oil in a skillet over medium heat until golden, 3 to 4 minutes. Crumble in the sausage, add the crushed red pepper and cook for a couple of minutes. Add the marinara sauce, mix everything together and cook for 5 to 7 minutes. Set aside to cool.
- To assemble, add about 2 spoonfuls of the sauce--just enough to coat the bottom--to a baking dish. Then layer half of the cooled noodles, half of the mozzarella cubes and half of the remaining sauce. Repeat the process: layer the remaining noodles, mozzarella and sauce, then top with the Parmesan. Cover and put in the fridge or freezer until ready to cook.
- When ready to cook, preheat the oven to 350 degrees F. Cook the rigatoni until heated through and bubbling, 25 minutes straight from the fridge, or 2 hours straight from the freezer. Garnish with minced parsley before serving.

TOFU, RICE AND VEGETABLE CASSEROLE
This is a good way to introduce tofu to the faint of heart. It's pretty much undetectable, but it's in there, being all nutritious and stuff. This is an original recipe.

Steps:
- In a large saucepan over medium heat, brown the rice, stirring constantly; pour it into a greased or pan-sprayed 1-1/2-quart or larger oven-safe casserole.
- In the same saucepan, melt the margarine and add the onion and curry powder. Note that you might want to add a bit of tamari, Bragg's Liquid Aminos, or salt if you're using curry powder that does not contain salt.
- Cook until the onion's almost transparent, about 5 minutes, and then add the spinach, tofu, and corn; cook until all are thawed, breaking up the tofu with a spoon.
- When through, drain, pressing the liquid out of the vegetable/tofu mixture (or you can just squish it through your fingers, in which case, of course, cool it slightly beforehand).
- Reserve this liquid and add enough hot water to it to make 2 cups. In a separate container, heat this liquid to boiling.
- Stir the boiling liquid back into the vegetable/tofu mixture and bring it all to a boil.
- Remove it from the heat and stir it into the rice that's in the casserole dish.
- Cover and bake it at 350 degrees for about 30 minutes, or until the rice is tender and all the liquid has been absorbed.
- Fluff the rice with a fork and serve.

RIGATONI CASSEROLE
This was my favourite meal growing up as a kid. My Mom always let us pick the family's meal on our birthdays, and I always picked this, even though my Mom didn't like using the oven in the heat of August. I still love it today! It is my "comfort food" and I make it often. It is great for dinner parties, too. Add some garlic bread and a salad and you have a great meal!

- Spicy Sausage Rigatoni. If you like meals with a bit of spice and heat, you’ll appreciate this spicy sausage rigatoni. You’ll love its tender pasta and well-seasoned, flavorful chunks of sausage.
- Baked Rigatoni Pasta. This recipe for baked rigatoni is quite similar to my recipe for baked ziti. They both use ground beef and Italian sausage for the protein, onions and garlic for spice, and gooey mozzarella.
- Rigatoni Skillet with Mushrooms and Spinach. I love skillet meals because they’re so quick and straightforward. This one, for example, takes only 30 minutes from start to finish.
- Greek Pasta Bake. Okay, so the Greek pasta bake takes some time to make. Let’s get that out of the way upfront. It needs about 40 minutes of prep work and another hour to bake.
- Artichoke and Pea Rigatoni Pasta. If you just don’t have 1 or 2 hours to cook dinner, try this 30-minute pasta instead. It’s light and zesty and – aside from the carb count – relatively healthy for you, too!
