Steps:

  • 1. Heat a skillet over medium heat. 2. Butter one side of 2 slices of whatever bread you're using. Place one slice butter side down in the pan. 3. Top with sliced avocado, mozzarella cheese slices and a couple slices of tomato. Drizzle with a bit of olive oil and sprinkle with salt. Top with remaining piece of bread, butter side up. 4. Grilled Tomato and Cheese image

Steps:

  • Thinly slice the tomatoes and lay them on a paper towel. Sprinkle with salt and let sit to release any water, about 15 minutes. Pat dry.
  • Lay out 4 slices of the bread on a work surface. Layer each with 2 slices of cheese, making sure that they cover to the edges. Follow with 2 slices of tomato and then 1 more slice of cheese. Close the sandwiches with the remaining bread. Thinly and evenly spread the butter on both sides of the bread using about 1 1/2 tablespoons of the butter for each sandwich.
  • Place 2 sandwiches into a nonstick medium skillet over medium heat. Cover the skillet with a lid and cook until the bread is evenly golden brown, about 2 minutes. Flip, cover again and cook until the bread is golden brown and the cheese is visibly melted, about 2 minutes more. Repeat with the remaining sandwiches.

1 large or 2 medium heirloom or beefsteak tomatoes
Kosher salt
Eight 1/3- to 1/2-inch-thick slices Pullman bread
12 slices sharp Cheddar or American cheese
6 tablespoons cultured butter, softened

TOMATO-AVOCADO GRILLED CHEESE

I don't remember where I got this recipe, but it sure is delicious! To get the perfect grilled cheese every time, you should start by heating your skillet to low. Once you build your sandwich, leave the skillet on low and cover with a lid or foil. Cook for a couple of minutes to let the cheese get gooey and you fillings get warm. Then remove the lid/foil and turn up heat, flipping your sandwich until it is perfectly toasted. Yum!

Tomato-Avocado Grilled Cheese image

Steps:

  • In a small bowl, mash together avocado, lemon juice, cumin and salt until smooth. Stir in parsley. Set aside.
  • Lightly spread mayo on each of the bread slices. To build your sandwich, turn one slice of bread mayo side down in skillet; top with cheese; spread with avocado mixture and top with tomato slices the remaining bread slices.
  • Cover your skillet with a lid or foil and cook on medium-low for several minutes to allow the cheese to melt and fillings to warm. Remove lid and increase heat to medium-high. Continue cooking until your bread is done to your liking.
  • Note: You may substitute butter for the mayo, however, I find that the mayo makes the bread crispier and less greasy than butter. And it leaves no mayo taste behind.

Grilled Avocado and Tomatoes, Basil Oil and Cotija Cheese with Pine Nuts image

Steps:

  • Combine oil, basil, salt and pepper in a blender and blend for 1 minute. Strain into a bowl, discard solids
  • Combine tomatoes and onion in a bowl, add a few tablespoons of the basil oil and season with salt and pepper. Reserve remaining basil oil for Shrimp recipe.
  • Heat grill to medium heat. Brush avocado with oil on grill and season with salt and pepper. Grill cut side down until lightly golden brown, about 2 minutes. Remove to a platter, cut side up. Place some of the tomato mixture on top of each avocado, drizzle with more of the oil and sprinkle with the pine nuts and cheese. Garnish with basil leaves.

  • Place 1/4 cup cheese on each of 4 bread slices. Divide onion, bacon, tomato and avocado evenly onto bread slices. Top with remaining cheese and bread slices. Spread 2 teaspoons butter over each top slice of bread.
