TRIPLE BERRY COOKIE CRUMBLE

Steps:
- Heat oven to 350°F. Spray 9-inch round (2-quart) glass baking dish with cooking spray.
- In small bowl, mix 1/2 cup cookie mix and 1/2 cup sugar. In large bowl, toss together strawberries, blackberries and blueberries. Sprinkle with cookie mix-sugar mixture. Toss gently until berries are well coated. Place fruit mixture in baking dish.
- In medium bowl, mix together remaining cookie mix and cinnamon. Using pastry blender or fork, cut butter into cookie mix until mixture is crumbly. Sprinkle evenly over fruit.
- Bake 35 to 40 minutes or until topping is golden brown and fruit is bubbly. Serve warm or room temperature.

TRIPLE FRUIT SCONES
This is a favorite recipe for a Mother's Day Treat or any special breakfast, brunch or girl's get together over coffee!

Steps:
- 1. Add butter, apricots and craisins; mix until butter is pea-sized. Use fingers to work butter into dry mixture.
- 2. In separate bowl, combine egg and egg white, buttermilk and orange rind. Add this liquid to dry ingredients and mix it just until it comes together.
- 3. Using your hands knead several times (6-8) in bowl, then place dough on lightly floured board.
- 4. Form dough into a 12 x 6 inch rectangle. Cut into 12 triangular pieces. At this point you may sprinkle coarse sugar granules on top.
- 5. Bake on cookie sheet at 350 degrees for 13-16 minutes or until lightly browned. You may use a powdered sugar glaze drizzled over the warm tops.

Steps:
- Preheat oven to 350.
- Place sugar and butter in mixing bowl and beat until well-creamed.
- Add corn syrup, orange juice, vanilla, and egg and beat until well combined.
- Combine flour and next five ingredients.
- Add flour mixture to butter mixture and stir until just combined.
- Add dried fruits and coconut and stir gently.
- Drop dough by rounded teaspoonfuls on ungreased baking sheets about 2 inches apart.
- Bake at 350 for 12 minutes or until golden.
- Cool on pan 1 minute and then remove to wire racks.

- Snip off the hard stems of the figs with scissors or a small knife and coarsely chop the figs. In a medium bowl, combine the figs, raisins, cherries, apricots, honey, sherry, lemon juice, pecans, and a pinch of salt. Cover with plastic wrap and allow to sit overnight at room temperature.
- In the bowl of an electric mixer fitted with the paddle attachment, cream the butter, cloves, superfine sugar, and brown sugar on medium speed until smooth, about 3 minutes. With the mixer on low speed, add the egg and mix until incorporated. With the mixer still on low, slowly add the flour and 1/4 teaspoon salt just until combined. Don't over mix! Add the fruits and nuts, including any liquid in the bowl.
- Divide the dough in half and place each half on the long edge of a 12 by 18-inch piece of parchment or waxed paper. Roll each half into a log, 1 1/2 to 1 3/4-inch thick, making an 18-inch-long roll. Refrigerate the dough for several hours, or until firm.
- Preheat the oven to 350 degrees.
- With a small, sharp knife, cut the logs into 1/2-inch-thick slices. Place the slices 1/2-inch apart on ungreased sheet pans and bake for 15 to 20 minutes, until lightly golden.

- Preheat oven to 350 degrees F. Grease cookie sheets.
- Melt the chocolate squares and butter or margarine in a double boiler. Stir well and remove from heat.
- Cream sugar and eggs in medium sized bowl until thick and creamy. Mix in vanilla and melted chocolate.
- Mix in the flour, baking powder and salt until well blended. Stir in chocolate chips and nuts.
- Drop by teaspoonfuls about 1 1/2 inches apart on cookie sheet. Bake for 8 minutes or until tops crackle and look shiny. Cool 3 to 5 minutes. Remove to racks; cool completely.

- Melt unsweetened chocolate, bittersweet chips, and butter in heatproof bowl set over saucepan of simmering water, stirring frequently, until completely smooth and glossy. Remove bowl from pan and set aside to cool slightly.
- Stir coffee powder and vanilla extract together in small bowl until disolved. Beat eggs and sugar in large bowl with electric mixer at medium high speed until very thick and pale, about 4 minutes. Add vanilla/coffee mixture and beat until incorporated, 20 seconds. Reduce speed to low, add chocolate mixture, and mix until thoroughly combined, about 30 seconds.
- Whisk flour, baking powder and salt together in medium bowl. Using large rubber spatula, fold flour mixture and semisweet chips into batter. Cover bowl with plastic wrap and let stand at room temperature for 20 to 30 minutes until batter firms up (it will look more like thick brownie batter than cookie dough).
- Meanwhile adjust two oven racks to upper and lower middle positions and heat oven to 350°F.
- Line two large baking sheets with parchment paper. Using 1 heaping tablespoon batter per cookie, place cookies 2 inches apart on prepared sheets. Bake until cookies are shiny and cracked on top, 11 to 14 minutes, rotating baking sheets top to bottom and front to back halfway through the baking time. Transfer baking sheets to racks and cool completely, on baking sheets, before serving.

- Place the first 5 ingredients in a large bowl. Drizzle with Triple Sec and toss to combine. Let stand, covered, overnight.
