TROPICAL MOUSSE
At less than 150 calories, this dessert will steal the show! Although perfect for hot weather, I often make this as a finale to a heavy meal in the winter months. When fresh mangoes aren't available, I use the jar variety found in the produce section with equal success. This is a winner with my "low-cal, low-fat, low-sugar" friends! Cook time is really freeze time.

Steps:
- In a food processor or blender, blend mangoes until smooth.
- Add water to equal 2 cups puree.
- Transfer to a medium sauce pan and bring to boil.
- In a large mixing bowl, stir together gelatin and sugar.
- Pour mango mixture over this and stir to dissolve.
- Stir in lemon juice.
- Cover and freeze for one hour or until mixture rounds up on a spoon.
- Remove from freezer and beat with electric mixer 3 minutes or until thick and light.
- Fold in whipped topping.
- Spoon or pipe into long stemmed dessert glasses.
- Garnish with option fruit.
- Chill until set.
TROPICAL TIRAMISU
Put a Caribbean twist on a tiramisu by swapping the usual coffee for sponge soaked with mango and lime juices. The addition of rum makes it extra decadent

Steps:
- Beat together the mascarpone, double cream, coconut cream, icing sugar and rum using an electric whisk until thick enough to leave a prominent trail when you turn it off and lift it, then fold through the lime zest.
- Make the soaking liquid by stirring together the mango juice, lime juice and rum in a jug, then pour into a shallow bowl.
- Get a medium dish ready (about 30 x 20cm). Dip half the sponge fingers in the soaking liquid for about 10 seconds on each side and place in a single layer in the dish, then drizzle over 3-4 tbsp of the liquid. Top with a layer of half the mascarpone cream, then a layer of sliced mango (using about half). Repeat with the remaining sponges, mascarpone cream, and mango slices. Chill for at least 5 hrs, or preferably overnight. Just before serving, sprinkle over the flaked coconut and lime zest curls.

- Preheat oven to 325°. In a large bowl, beat the sugar, pumpkin, oil and eggs until well blended. Combine the flour, baking soda, cinnamon and salt; gradually beat into pumpkin mixture until blended., Transfer to a greased and floured 9-in. square baking pan. Bake 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut cake into 3/4-in. cubes., Meanwhile, increase oven setting to 350°. Whisk egg white; stir in pecans and sugars. Transfer to a foil-lined baking sheet. Bake 9-13 minutes or until puffed, stirring once. Cool completely., In a large bowl, beat cream cheese and confectioners' sugar until smooth. Add the pumpkin, cinnamon and vanilla. Fold in 1-1/2 cups whipped topping., In a 3-1/2-qt. trifle bowl or glass serving bowl, layer half each of the cake, pumpkin mousse, remaining whipped topping and pecans. Repeat layers. Cover and refrigerate for at least 2 hours.
