JICAMA AND PINEAPPLE SALAD IN A CILANTRO VINAIGRETTE

Sweet and tangy work well together in this palate-pleasing salad.

Jicama and Pineapple Salad in a Cilantro Vinaigrette image

Steps:

  • Whisk together the serrano pepper, lime juice, rice vinegar, cilantro, salt, and pepper in a large bowl. Slowly drizzle in the olive oil while continually whisking. Add the pineapple and jicama; toss to coat. Allow to sit 30 minutes to 1 hour.
  • Place the spring mix in a large salad bowl; scatter the avocado over the lettuce; top with the marinated pineapple and jicama, drizzling the remaining vinaigrette over the salad. Serve NOW!

  • In a large salad bowl, toss the romaine, pineapple, macadamia nuts, green onions and bacon., In a small bowl, whisk the pineapple juice, oil, red wine vinegar, honey, salt and pepper. Pour over salad; toss to coat. Sprinkle with coconut.

  • In blender, combine pineapple, red wine vinegar, oil, sugar, pepper and salt. Blend until pineapple is smooth and ingredients are incorporated.

  • Cook bacon until crisp over medium high heat.
  • Drain, crumble and set aside.
  • Combine pineapple juice, red wine vinegar and salt and pepper in a small bowl.

  • Place all of the Pineapple Vinaigrette ingredients in a blender or food processor and puree until smooth. Taste and add additional honey, paprika, salt and pepper if desired, keeping in mind the fruit will be sweet. (I add a little more paprika for a kick)
  • Toss all the salad ingredients together or toss vegetables then add pineapple, mango and avocado to individual servings if you know there will be some left (so you can save separately). Drizzle individual servings with dressing (you don't need a lot). Enjoy!
