TUNNBRODSRULLE II
We saw this on "No Reservations"; this is our approximation of it. It is Swedish street food. Amounts are approximations; make this to suit your own ideas. These amounts were based on how I made it tonight. Note: I didn't bother making the shrimp salad. I just layered everything on in the order listed. If you do that, however, you need to chop the apple at the last moment because otherwise it turns brown.

Steps:
- Make a shrimp salad with the shrimp, mayonnaise, apple and rutabaga.
- Slightly heat hotdogs (I microwaved for one minute). Lay tortilla flat. Top with everything in the order listed, ending with the shrimp salad and lettuce.
- Fold into an open cone shape and enjoy.

Steps:
- Mix together the mayonnaise dressing or the shrimp dressing.
- Boil the potatoes until tender. Mash, mixing in the other ingredients for the mashed potatoes.
- Fry the hotdogs in the butter.
- To assemble: Put two spoons of the mashed potatoes on tortilla. Add shrimp salad or the mayonnaise dressing, as well as lettuce and onions. Top with a hot dog, ketchup and mustard. Roll it together.

- Heat milk to 110-115 F. Add sugar and stir to combine. Sprinkle yeast on top and leave for 10 minutes until it turns foamy.
- In the bowl of an electric mixer, combine rye flour, 3 cups of the wheat flour, honey, salt, fennel seed and baking soda. Knead for 5 minutes until dough is soft and elastic.
- Place in a greased bowl and cover with plastic wrap sprayed with non stick spray and a kitchen towel. Leave for 1 hour. Due to the low gluten content of rye, it will only proof about 50% of original volume.
