GRILLED TURKEY BURGER WITH SWEET PEPPER MAYO

- Preheat the grill to high.
- In a bowl add the mayonnaise, lemon juice, red pepper flakes, and roasted peppers. Season with salt and pepper, to taste, and set aside.
- In a large bowl, mix the ground turkey with ranch dressing mix, and salt and pepper, to taste. Form the meat into 4 patties and put on a platter lined with parchment paper. Season the burgers with salt and pepper, to taste, and drizzle both sides with olive oil .Grill the burgers for 4 to 5 minutes on each side. Top each burger with 2 slices of Cheddar and 1 slice of bacon. Grill for an additional minute or until the cheese melts. Remove from grill.
- Spread the sweet pepper mayonnaise on each side of rolls and add the burgers. Serve with pickled jalapenos and enjoy.
GRILLED TURKEY BURGERS
There are a couple steps to ensure a crisp on the outside, juicy on the inside and all around delicious grilled turkey burger. Grated onion and barbecue sauce give the patties savoriness and provide additional moisture, so they don't dry out from the high heat of the grill. Coating the patties in a mixture of barbecue sauce and mayonnaise guarantees a seared and glazed exterior. If you'd like to turn these into cheeseburgers, simply drape sliced cheese - preferably Cheddar or pepper Jack - over the patties in the last two minutes of grilling and cover the grill.

- Heat the grill to medium-high. Lightly grease a plate and set aside. Coarsely grate 1/4 cup onion; reserve the remaining onion. In a medium bowl, mix the turkey, grated onion and 2 tablespoons barbecue sauce. Form 4 patties about 4 ½ inches wide (about 5 ounces each). Press a small dimple in the center of each patty, then place the burgers on the plate and refrigerate until firm (at least 5 minutes or, covered, up to 2 days).
- Meanwhile, in a small bowl, stir together the remaining 2 tablespoons barbecue sauce with the mayonnaise; season with 1 teaspoon each of salt and pepper.
- When ready to grill, dip the reserved onion in oil. Clean the grates with a grill brush, then grease the grates with the oiled onion. (This perfumes the grill and your patties.) Lightly coat the tops of the burgers with some of the mayo mixture (about 1/2 teaspoon per patty).
- Grill the burgers, mayo side down, until well browned and patties release from the grates, 4 to 6 minutes. (If flare-ups occur, move to an area of the grill where there are no flames underneath. For a gas grill, close the lid between flips, listening and keeping an eye out for flare-ups.) Spread mayo mixture on the tops of the patties, then flip and grill on the second side until cooked through, another 4 to 6 minutes.
- Transfer to a plate and let rest for at least 5 minutes. Grill the cut sides of the buns until toasted, 1 to 2 minutes. Build burgers on the buns with the patties and desired toppings and condiments.
ACTUALLY DELICIOUS TURKEY BURGERS
This is a simple and delicious recipe. After making them the first time my husband said 'no more' to beef burgers. These are really good - any cooking method may be used, and they freeze very well. The recipe can also be used for meatballs or meat loaves.

TURKEY BURGERS WITH GRILLED TOMATOES AND LEMON MAYONNAISE
Pat: You know I like my burgers, but who ever thought that a burger could taste this good and be so healthy? My turkey-burger recipe (a favorite with the ladies) is a mixture of ground turkey, fresh marjoram, crushed red-pepper flakes, and garlic. The key to making these burgers taste as good as the old reliable is to use ground turkey that is 85 percent lean. This will yield an incredibly satisfying (and still virtuous) patty. Grilled tomatoes, silky avocado, and a sunny lemon condiment help keep the burger moist.

- Use your hands to mix the ground turkey, marjoram, parsley, scallions, garlic, salt, red-pepper flakes, and black pepper in a medium bowl; do not over mix or the burgers will be tough. Shape the meat into four patties, each about 3/4-inch thick, and set them on a plate. Cover with plastic, and refrigerate for at least 30 minutes or for up to 8 hours.
- Thirty minutes before you're ready to grill the turkey patties, remove them from the refrigerator. Heat the grill to medium-high. Lightly brush the patties with oil, and grill over direct heat for 4 to 5 minutes on each side, until just cooked through. (Do not overcook burgers or they will dry out.) Brush the grill with additional oil, then grill the tomato slices until they are lightly charred, 1 to 2 minutes per side, and use a metal spatula to remove them from grill.
- Serve the burgers on the toasted muffins with the grilled tomatoes, Lemon Mayonnaise, lettuce, and sliced avocado.
- Combine the ingredients in a small bowl, cover with plastic, and refrigerate until needed.

- In a nonstick skillet, heat 1 tablespoon of the canola oil. Add the sliced onion and cook over moderate heat, stirring occasionally, until golden and softened, about 25 minutes. Transfer the onion to a bowl. Wipe out the skillet.
- Heat 1 tablespoon of the canola oil in the skillet. Add the celery, apple and scallions and cook over moderate heat until softened, about 8 minutes.
