HERBED TURKEY AND DRESSING
Whenever I serve this succulent golden turkey and delectable dressing, guests fill their plates and I'm buried in compliments. This recipe always makes a holiday dinner one to remember. It's well worth the time. -Marilyn Clay, Palatine, Illinois

- In a small saucepan, combine the broth, butter and salt; bring to a boil. Add herbs; set aside. , Toast bread; cut into 1/2-in. cubes. Place in a bowl. In a skillet, cook sausage over medium heat until no longer pink; remove with slotted spoon and add to bread. Add butter to drippings; saute the celery, carrots, mushrooms, ham and onions for 15 minutes. , Add to bread mixture; stir in the nuts, fruit and seasonings. Add egg substitute and 3/4 cup basting sauce; mix lightly. , Stuff turkey with about 8 cups dressing. Skewer openings; tie drumsticks together. Place on rack in roasting pan. Baste with some of remaining basting sauce. , Bake, uncovered, at 325° for 5 to 5-1/2 hours or until a thermometer reads 180° for the turkey and 165° for the stuffing, basting every 30 minutes. When turkey begins to brown, cover lightly with foil. , Add broth to remaining dressing; toss to coat. Place in a greased 2-1/2-qt. baking dish; refrigerate. Remove from the refrigerator 30 minutes before baking. Cover and bake at 325° for 1 hour; uncover and bake 10 minutes.

- In 10-inch skillet, melt butter over medium-high heat. Add onion, celery and carrots; cook, stirring occasionally, until tender.
- In large bowl, mix bread cubes, parsley, poultry seasoning, salt and pepper. Add broth and butter-onion mixture, stirring until desired moistness (stuffing will become a little more moist during roasting because it will absorb juices from turkey).
- Use to stuff 1 (14- to 18-lb) turkey. After stuffing turkey, place any remaining stuffing in 1- or 2-quart casserole that has been sprayed with cooking spray; cover and refrigerate. Bake stuffing in casserole with turkey for last 35 to 40 minutes of roasting time or until thoroughly heated.

THE BEST TURKEY DRESSING (STUFFING)
This dressing is adapted from "The Silver Palate Cookbook. It's rich and is always a big hit. No other bread is needed on the Thanksgiving table. Cook your turkey about 12-15 minutes per lb. at 325 degrees, basting frequently.

Steps:
- Melt 6 tablespoons butter in a large frying pan. Add onions. Cook over medium heat until onions are quite soft and tender, about 15 minutes. Transfer onions and butter to a large mixing bowl. Set aside. Melt another 6 tablespoons butter in the same frying pan. Add apple. Cook over medium heat, until lightly colored but not mushy. Transfer apples and butter to mixing bowl with onions.
- Crumble sausage into frying pan. Cook over medium heat, until lightly browned. With a slotted spoon, transfer sausage to mixing bowl. Reserve fat. Add remaining ingredients, except eggs and stock, to mixing bowl. Mix well. Add eggs. Mix. Add enough stock to bowl to make a moist, but not runny, mixture. Add fat to stuffing if desired. Stuff a 20-lb. turkey. If cooking dressing separately from turkey, pour fat over dressing in casserole. Bake at 325 degrees Fahrenheit for 45 minutes, or until nicely browned and cooked through.

- Sauté onion and celery in the butter until tender.
- Combine onion mixture with bread, pepper, eggs, salt, sage and poultry seasoning in a large mixing bowl.
- Stir in broth until well moistened.
- Bake in a greased foil-covered shallow baking dish at 325° for about 35 to 45 minutes.
- Take the cover off the last 5 minutes to brown.

TURKEY WITH DRESSING

- Heat oven to 350 degrees. Remove neck and giblets from inside the turkey, and discard or reserve for another use. Rinse turkey inside and out, pat dry with paper towels, and set aside.
- In a large heavy skillet over medium heat, melt 2 ounces ( 1/2 stick) of butter. Add the onion and celery, and saute until the onion is translucent, about 5 minutes. Reduce the heat to low, and add the remaining 8 ounces (2 sticks) of butter. Allow butter to melt, then immediately remove pan from heat and set aside.
- In a large mixing bowl, combine white bread, corn bread, poultry seasoning, sage, nuts and ham. Add sauteed vegetables and melted butter. Season with salt and pepper to taste, and toss to mix well.
- Stuff the front and rear cavities of the turkey with the dressing, truss the bird, and place in a deep roasting pan. Cover pan tightly with aluminum foil. Roast turkey for 3 hours. Remove foil, and brown for 30 to 45 minutes more, basting occasionally with the pan juices. To serve, place turkey on a large platter. The dressing may be spooned directly from the bird, or transferred into a serving dish.

NEWFOUNDLAND DRESSING FOR TURKEY
Now that I'm engaged to a Newfie, I have started learning the "old family recipes", as well as some new words... Anyhow, this is the dressing that Newfoundlanders enjoy with their turkey - it is really different than the "stuffing" that I grew up with out in BC. This is enough for a 10 lb turkey.

- Tear bread slices up and place them in a food processor. Pulse until crumbs, not chunks. Remove crumbs and place in medium bowl.
- Add onion, celery, apple, savoury and ginger, and mix well.
- Add melted butter and mix again. Add salt and pepper to taste.
- NOTE: This can also be placed in foil and heated through for 10 minutes, if not stuffing turkey or if there is extra dressing.
- NOTE: A popular Newfie post-turkey meal is "Chips, dressing, and gravy" in which the leftover dressing is placed on top of french fries and then covered in gravy. A sort of Newfie poutine.
