TURKEY SPRING ROLLS

Steps:
- Place the turkey in a bowl and drizzle in the soy sauce, sesame oil, rice vinegar and the hot chili oil. Stir to combine and give it a taste. If you'd like a stronger flavor, add a little more of any of the ingredients.
- Next, place the cellophane noodles in a large bowl. Cover them with boiling water and let them sit according to the package directions.
- When they are tender but still have a nice bite, drain and set the noodles aside.
- Soften the rice paper wrappers by placing them one by one into a bowl of warm water and taking them out when they're soft but still hold together.
- To assemble each spring roll, lay a wrapper on a plate. Lay a small line of noodles in the center. Add a small amount of lettuce, turkey, alfalfa sprouts, a few carrot and cucumber strips, and top with a sprinkling of cilantro.
- Fold in the sides of the wrappers and roll it into a tight roll. Repeat to make the rest of the rolls.
- For the dipping sauce: Combine the cranberry sauce, soy sauce and a few dashed chile oil.
- Dip the rolls into the sauce and dig in! Best if eaten within 1 hour of preparing.

- Spread 2 tablespoons of cream cheese over each tortilla. Sprinkle with garlic powder. Layer each with 3/4 cup spinach, turkey, cheese, red pepper and onions. Top with remaining spinach. , Drizzle with dressing. Roll up tightly jelly-roll style; wrap in plastic. Refrigerate until serving.

- Lay tortilla out flat. Spread the cream cheese on the tortilla. Sprinkle lettuce, tomatoes, and onions in the center of the tortilla. Place the turkey all over. Top with avocado spread. Roll burrito style, making sure the ends are tucked in. Slice in half on the bias and serve.
- Jalapeno Cream Cheese: Mix the jalapenoes into the cream cheese. Season with salt and pepper. Refrigerate until needed.

Steps:
- Sauté onions in a little oil. When soft and just turning brown add sugar.
- When caramelized add balsamic vinegar. Let cool.
- Spread tortillas with alouette cheese, layer with turkey, onions and then spring lettuce mix.
- Roll up and I wrap them with either foil or Saran Wrap and refrigerate up to 4 days. Enjoy!

- Melt the butter and olive oil in a large pan set over medium heat. Add the onions and cook, stirring frequently, for 15 minutes, or until the onions soften and begin to brown. Add a generous pinch of salt; continue to cook the onions for 20-30 minutes, or until they are very soft and deeply browned. If the pan gets too dry, add a tablespoon or two of water to keep the onions from burning.
- Remove the onions from the heat and let them cool to room temperature. Stir them into the softened goat cheese. Use the goat cheese spread immediately or refrigerate for later.
- Spread 4 tablespoons of the caramelized onion spread onto each wrap. Top with turkey and vegetables. Wrap tightly, then cut each wrap in half. Serve immediately, or wrap tightly in foil and chill until ready to eat.
