TURKEY TACOS RECIPE BY TASTY
Here's what you need: oil, lean ground turkey, taco seasoning, salt, pepper, canned diced tomato

Steps:
- Heat a skillet over high heat. Once hot, add oil to coat the bottom of the pan.
- Add the ground turkey and break apart with a spatula.
- Add taco seasoning, salt, and pepper and stir, cooking until meat has browned and is fully cooked through.
- Stir in the tomatoes. Bring to a gentle simmer for about 5 minutes and remove from heat.
- Assemble tacos with your favorite toppings.
- Enjoy!

- Heat a large nonstick skillet over medium-high heat. Add the ground turkey to the skillet and season with the chili powder, cumin and some salt and pepper. Cook, breaking up the meat with the back of a spoon, until browned, about 5 minutes. Add the beans, salsa, chipotle chile and adobo sauce to the skillet and cook, stirring often, until warmed through and slightly thickened, about 5 minutes more.
- Meanwhile, lightly char the tortillas over an open flame. Set aside wrapped in a clean kitchen towel to steam.
- Spoon the turkey mixture onto the tortillas and serve with diced tomato, avocado, radishes, queso fresco, cilantro leaves, lime wedges and sour cream.
TURKEY TACO SKILLET
I found this recipe in Woman's Day magazine. My future hubby and I really liked this dish. When I made this I used instant white rice. We decided to leave off the tomatoes and not serve this with the tortilla chips, but I think I'll use crushed tortilla chips next time. I did also add kidney beans to this before cooling. I did also find myself the water did not completely absorb but it really wasn't that big of a deal once mixed in.

- Cook turkey in a large nonstick skillet over high heat, stirring to break up meat, 5 minutes or until browned. Stir in seasoning mix, water, salsa and corn; bring to a boil. Stir in rice. Cover and remove from heat; let stand 12-15 minutes, until liquid is aborbed. Sprinkle with cheese; cover and let stand 1-2 minutes to melt cheese.
- On plates, top rice mixture with lettuce, tomato and sour cream. Serve with tortilla chips.

- TURKEY TACO MEAT: Dice the onion and mince the garlic. Heat 1 tablespoon of olive oil in a large skillet over medium high heat. Once the oil is hot, add in the diced onion. Cook for 3-5 minutes or until soft and translucent. Stir in the garlic and cook for 20-30 seconds. Add in all of the seasonings: 1 tablespoon chili powder, 1 teaspoon ground cumin, 1 teaspoon paprika, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/2 teaspoon pepper, and 1/2 tablespoon beef bouillon powder. Cook and stir the spices until fragrant, about 30 seconds. Nothing should be burning; reduce the heat if needed.
- TACO MEAT CONT.: Press the seasoned onion to the edges of the skillet. Add the ground turkey to the center of the pan. Crumble the meat into small pieces and cook until no longer pink (but not cooked through all the way), about 5-8 minutes. (If the ground turkey has released liquid, drain off at this time). Add in the undrained fire-roasted diced tomatoes and scrape the bottom of the pan to release any browned bits (this is where the flavor is!) Add in the diced green chiles. Let simmer for 2-3 minutes, or until most the liquid is absorbed. Add in the frozen corn and drained and rinsed black beans and gently stir to warm through.
- GARNISH: Reduce the heat to low. Sprinkle the cheese on top and gently stir to combine and melt. Once melted and incorporated, add green onions and cilantro. Serve immediately with chips (See Note 1). Top skillet with your choice of taco toppings such as sour cream, diced avocado, additional herbs, fresh lime juice, etc.

- Heat your cooking fat of choice (I use EVOO) in a nonstick pan. Add diced potatoes, peppers, and onion. Sauté on medium high heat, stirring occasionally until sides of potatoes have browned. This can take 5 to 10 minutes depending on your stove and the size of your potatoes. Once potatoes have some good browning reduce heat to medium, cover, and let cook for another 2 to 3 minutes until tender.
