TUXEDO STRAWBERRIES

Steps:

  • Line a tray or baking sheet with waxed paper; set aside. Wash strawberries and pat until completely dry. , In a microwave-safe bowl, melt vanilla chips and 1-1/2 teaspoons shortening at 70% power; stir until smooth. Dip each strawberry until two-thirds is coated, forming the tuxedo shirt, allowing excess to drip off. Place on prepared tray; chill for 30 minutes or until set. , Melt chocolate chips and remaining shortening. To form the tuxedo jacket, dip each side of berry into chocolate from the tip of the strawberry to the top of vanilla coating. Repeat on the other side, leaving a white V-shape in the center. Set remaining chocolate aside. Chill berries for 30 minutes or until set. , Remelt remaining chocolate if necessary. Using melted chocolate and a round #2 pastry tip, pipe a bow tie at the top of the white V and 3 buttons down front of shirt. Chill for 30 minutes or until set. Store in the refrigerator in a covered container for up to 1 day.

TUXEDO

The Tuxedo is a simple affair, made of gin, sherry and orange bitters, that will give any traditional martini a run for its money in dryness. One of the most prominent old cocktail books to feature this recipe was issued by the Waldorf-Astoria hotel bar in 1934. Jarred Roth, beverage director of the Bar Room at the Beekman in New York, gives the drink an added herbal touch by applying a light rinse of absinthe to the glass. To achieve a more traditional Tuxedo flavor profile, simply omit the absinthe.

Steps:

  • Rinse a chilled cocktail glass with absinthe and discard the excess liquid. Combine the remaining liquid ingredients in a mixing glass filled with ice and stir until chilled, about 30 seconds. Strain into the waiting cocktail glass. Garnish with the orange twist and cherry.

Absinthe rinse
2 1⁄4 ounces Plymouth gin
1⁄2 ounce Dolin dry vermouth
1⁄4 ounce maraschino liqueur
4 dashes orange bitters
Orange twist and cherry

TUXEDO NO. 2

This version of the Tuxedo cocktail first appeared in a cocktail book in 1900. Essentially a traditional martini that is lent sweet and herbal notes by small amounts of maraschino liqueur and absinthe, it is a gentler, more delicate version of its austere cousin. Jarred Roth, beverage director of the Bar Room at the Beekman in New York, prefers the Brooklyn-made Greenhook gin and the soft French Dolin vermouth.
