BOURBON AND DP BAKED BEANS

I came up with this recipe after having made some bourbon baked beans and seeing a recipe for cola baked beans and I thought: Why not combine the two?

Bourbon and DP Baked Beans image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix brown sugar, paprika, mustard, and cayenne pepper together in a bowl. Whisk in pepper soda, ketchup, and Worcestershire sauce until brown sugar is dissolved.
  • Cut 4 slices of bacon into small strips. Cook and stir in a large Dutch oven over medium heat until almost crispy, 3 to 5 minutes. Transfer to a bowl, reserving bacon grease.
  • Stir onion into the bacon grease in the Dutch oven; cook and stir until soft, 3 to 5 minutes. Add garlic; cook and stir for 1 minute. Pour in bourbon, stirring to scrape up browned bits off the bottom with a wooden spoon. Stir bacon strips back in.
  • Pour brown sugar mixture and baked beans into the Dutch oven. Simmer until beans are heated through, about 15 minutes. Arrange remaining 4 slices of bacon on top of the beans.
  • Bake in the preheated oven, covered, until beans are bubbly and sauce is syrupy, about 3 hours.

UNCLE BOB'S BOURBON BAKED BEANS

My Great Uncle Bob loved to show off in the kitchen. He really was an excellent cook and his closely guarded recipes were handed around within the family after his passing. He had written on the food stained piece of paper that the baking soda kept the skins soft and tender. So...since I've had his recipe, I've never cooked dried beans without following his advice. Prep time does not include soaking time.

Uncle Bob's Bourbon Baked Beans image

Steps:

  • Soak beans overnight. Drain and rinse. Turn into a large pot with tight fitting lid and cover with water; bring to boil then immediately reduce to simmer. Add two slices bacon, quartered onion and cook for 2 hours. About ½ hour before beans are tender (at 1½ hours), add 1 Tbsp. salt and ½ tsp baking soda. Stir until foaming subsides. The baking soda will rise up and threaten to overflow the pot. Continue to simmer another ½ hour. Drain and reserve liquid.
  • Heat oven to 325º F. Set out a 9" x 13" baking dish. (For large gatherings, I use the disposable aluminum pans.)
  • Cut each remaining slice of bacon in half or quarters; set aside.
  • In sauce pan, combine ketchup, bbq sauce, maple syrup, bourbon, dark brown sugar, yellow mustard, Worcestershire sauce, black pepper and 2 cups of the cooking liquid drained from beans. Over medium heat, bring to a low boil and cook, stirring, until well combined.
  • Pour beans in a 9"x 13" baking dish. Pour sauce mixture over beans, distribute chopped onion evenly over the top, and lay on remaining slices of bacon, each strip cut into halves or quarters. Cover with foil, folding one corner back to vent and bake at 325° for 1½ hours. Add more cooking liquid as necessary to keep beans from drying out.
  • Remove foil and continue baking approx. 30 minutes or until bacon is brown and excess liquid has been cooked out.

- 2 cups dry navy beans
- 1 cup dry kidney beans
- 1 medium onion, quartered
- 8 slices hickory smoked bacon, divided
- 1 tbsp. salt, or to taste
- ½ tsp. baking soda
- ½ tsp. black pepper

- ¼ cup ketchup
- ¼ cup barbecue sauce, homemade or store bought
- ¼ cup maple syrup
- ¼ cup kentucky bourbon, more or less to suit yourself
- ½ cup dark brown sugar, packed
- 2 tsp. yellow mustard
- 1 tbsp. worcestershire sauce

Steps:

  • Preheat the oven to 300 degrees F. Cook the bacon in a large Dutch oven over medium-high heat until browned and crisp, about 8 minutes. Add the onion and garlic and cook until softened, 4 to 5 minutes. Add the paprika and toast, stirring, about 30 seconds. Add the tomato sauce, molasses, bourbon, brown sugar, Worcestershire sauce, mustard, 2 teaspoons salt and 1/2 teaspoon pepper. Bring to a simmer and cook 5 minutes.
  • Add the beans and 8 cups water. Bring to a boil, then cover the pot and transfer to the oven. Bake until the beans are tender, about 3 hours. (If the beans are still slightly firm, continue cooking, stirring every 45 minutes and adding more water if necessary to just cover.)
  • Once the beans are tender, uncover and increase the oven temperature to 325 degrees F. Bake until the beans are thick and browned, about 1 more hour. (Again, if the beans need more time, continue cooking, stirring occasionally and adding more water if necessary.) Remove from the oven and thin with water if necessary.

  • Combine all ingredients in medium saucepan. Bring to boil over medium-high heat. Reduce to medium and continue boiling for 10 minutes. Serve hot.

Steps:

  • Heat oven to 350 degrees. Combine ingredients in a large, shallow baking dish or a bean pot. Stir to combine. Bake uncovered for 45 minutes. Stir, and cook for an additional 30 minutes. Serve warm.

Three 28-ounce cans baked beans, preferably Bush's
1 medium green bell pepper, seeded, deveined, and cut into 1/4-inch dice

Steps:

  • Dice the onion and the bacon, and cook with the hamburger until browned.
  • Drain all the beans except the pork and beans and add the rest of the ingredients.
  • This is a versatile recipe. It can be cooked on the stove top, in the oven (Dutch oven), a crock-pot, or can use cast iron skillet on the grill top.
  • Can also add a hint of chopped bell pepper-and or a hint of BBQ sauce. If you have left over ham.
