UPDATED HARLEM COCKTAIL
Traditionally, the Harlem cocktail does not include lemon juice. I've added it to this updated version because the additional acidity mellows the sweetness imparted by the drink's other components. If you've got an extraction juicer, fresh pineapple juice makes this drink especially bright and lively - but canned juice will work fine. I like to finish the drink with a couple dashes of Angostura bitters, but consider them optional - to your taste.

- Chill a cocktail glass. Fill a shaker with ice, and add gin, maraschino liqueur, pineapple juice and lemon juice. Shake vigorously, and strain into chilled glass.
- Add a couple of dashes of bitters.
- Garnish with the pineapple wedge and brandied cherry.
HOT BUTTERED RUM
There are many ways to make this classic winter drink. Using brown sugar is traditional, but maple syrup is awfully nice, too. Stirring in the butter with a cinnamon stick while you slowly sip the drink makes for a cozy ritual, but if the sight of a floating lump of butter disturbs you, add the butter earlier in the process, with the sugar-it'll melt faster. You can also make the drink sweeter (add more sugar) or spicier (substitute spiced rum for dark rum), or both, to your taste.

- In a mug or heat-proof glass, stir 1/4 cup of the very hot water with the dark brown sugar until the sugar dissolves. Add the rum. Fill the glass with the remaining hot water.
- Float the pat of butter on top and stir it into the drink using the cinnamon stick.

CHRISTMAS DAY CLEMENTINE SOUR
Here's a cocktail that's both a tribute to my mother (who loved whiskey sours laced with amaretto) and to my favorite flavors of the Christmas season: clementines, cinnamon and cloves. Juice the clementines a day in advance to save yourself some trouble on the holiday.

- In a shaker filled with ice, combine the bourbon, curaçao, brown sugar syrup and clementine juice (and egg white, if using). Shake vigorously for 30 seconds.
- In a chilled coupe glass, swirl enough amaretto to coat the inside. Strain shaken drink into coupe. Top with the bitters. Garnish with the ribbon of clementine peel.

Jeff Berry created this for Beachbum Berry's Latitude 29 in New Orleans, and it has become one of its most popular menu items. Ginger liqueur and cinnamon syrup give this gently effervescent number a spicy kick.

THE GIBSON
As with many classic cocktails, numerous origin stories have attached themselves to The Gibson like barnacles, and the truth is uncertain. One thing is clear, however: the pickled onion hasn't always been part of the Gibson legend. The recipe in my 1933 edition of The Savoy Cocktail Book is essentially a formula for what many would call a 50/50 martini - half gin, half dry vermouth, with a faint spritz of lemon essence. Nonetheless, we now tend to regard The Gibson as a martini in which a cocktail onion is swapped in for the usual olive - and that's the version of the story I'm sticking with in this recipe. Play with the proportions to your taste, but, as usual, I recommend that you don't stint on the vermouth.
